Question: Should you brine chicken breasts before roasting them?
Answers:

I always brined my turkey until I discovered salt rubs. Easier and more delicious. I don't use chicken breasts because we prefer the flavor and juiciness of the thighs instead. But I think you could brine or salt rub the breasts and they would be fine.



The cooking time and temperature of breasts, whether bone in or not, doesn't necessarily warrant brining, but if you want to add some insurance, you certainly can.

Double check that your chicken breasts aren't kosher. Kosher birds and parts have already been brined



Brining is a wonderful process and I would recommend it. Brining will result in a much moister and flavorful roasted chicken.



I heart beats, it isn't a necessity, more a matter of choice. I use thighs a lot rater than breasts, and at times I marinate them, depending on what I am doing.
