Anyone have recipes for sauces to pour over fish?!

Question: Anyone have recipes for sauces to pour over fish?
My husband loves fish so I'm trying to learn to like it. So far the only seasoning I like is lemon-pepper and usually I squeeze lemon juice on every bite too. Are there any sauces I could pour over my fish to make it more palatable?

Answers:

I personally LOVE fish and believe properly cooked FRESH fish should not have to have lemon-pepper, lemon or any sauce. But I know that some people need an extra flavor for their fish. Try these sauces:

Sage Butter Sauce:

1/2 stick butter
1 teaspoon olive oil
1 pinch salt
1 pinch dried rosemary
4-6 leaves sage
1 teaspoon garlic

While fish is cooking, put butter and olive oil into another frying pan. When the butter is half-way through melting, add the sage, rosemary, salt, and garlic. When the butter is fully melted and crackling, let it sit there to really get the flavor into the sauce. This should take about a minute to stand.

Then, when done, drizzle this sauce over the fish and you are sure to have a delicious dinner:).

GINGER-LIME SAUCE:

6 tbsp. butter
1 tbsp. fresh lime juice
1 1/2 tsp. finely grated ginger root

GINGER-LIME SAUCE: In a small saucepan over low heat melt butter and stir in lime juice and ginger root.

You can adjust the lime juice and ginger root to satisfy your taste buds! Yield: 4 to 6 servings.

ORANGE SAUCE:

1 tbsp. cornstarch
1 tsp. chicken-flavor instant bouillon
1 tsp. sugar
1/2 c. water
1 tbsp. orange juice
1 tbsp. butter
1/2 tsp. grated orange peel

In small saucepan, combine cornstarch, bouillon and sugar; gradually stir in water and juice. Cook and stir over medium heat until thickened and bubbly. Stir in butter and orange peel; keep warm.

YOGURT DILL SAUCE

1 c. plain yogurt
1/2 tsp. each dill weeds
Dijon mustard
1/2 c. chopped green pepper
1/2 c. thinly sliced green onion

Stir all ingredients together. Serve with fish.

There are not only many sauces that can simply be poured over a filet of fish, there are lots of other ways that fish can be prepared which introduce a load of flavor.

First, there's a lot of info you might be interested in on cooking fish in my answers to these previous questions:
