for sticky ribs, you have to use a glaze instead of a sauce. here's how we do it in my family. remove the membrane from the underside of the rack of ribs (not necessary, but we do it because we don' like to chew on the membrane). rub down with a dry rub if desired, then wrap heavily in plastic wrap and chill overnight. sometimes we don't have time for the rub, but when we do, we use a combo of 1 tbsp brown sugar, 1 tsp dry mustard powder, 1/4 tsp garlic powder, 1/4 tsp pepper, and sometimes a little cayenne for extra heat. then, we bake the ribs at 350 on a v-shaped roast rack set in a roasting pan filled with water, beer, rootbeer, or coca-cola. normally babybacks take an hour to cook through. you can also smoke your ribs, but I don't. preheat your grill and make your glaze. we use a glaze mixed of 1/2 c ketchup, 1/2 c molasses, 1/4 c honey, 1/4 c soy sauce, 2 tsp mustard powder, 2 tsp gnger, and 1/2 tsp garlic powder. it's very good! but you can use any glaze. sometimes I replace the soysauce with coke or rootbeer to make it sweeter. grill your ribs, brushing each side with sauce and turning every 5 or 6 minutes. I normally brush as much as possible on the top of he rack after turning/basting a few times, close the lid for 5 minutes, then serve. that way, you have an extra thick coat of sticky goodness that never caramelizes or falls through the grates. so delicious.
