Cheesy Beef Casserole
INGREDIENTS:
1 pound ground round
2 cups Spaghetti Sauce or Salsa
1 (8-ounce) package Ricotta Cheese
1/4 cup sour cream
1/3 cup green onions, chopped
2 tablespoons butter, melted
8 ounces egg noodles, cooked
TO PREPARE:
In a sauté pan over medium heat, brown meat. Drain grease. Stir in tomato sauce. Combine well and remove from heat.
In a 2-quart buttered casserole, place half of the noodles.
In a large bowl, combine cottage cheese, cream cheese, sour cream and onions. Spread over the noodles.
Cover with remaining noodles. Pour 2 tablespoons melted butter over noodles and top layer with tomato-meat sauce. Chill 1 hour before baking. Bake 1 hour at 375 degrees.
SERVES 6 to 8
Asparagus Casserole
2 cans asparagus spears
1 stick butter, melted
2 cups cracker crumbs
4 sliced hard boiled eggs
? lb. Grated cheddar cheese
? cup slivered almonds
1 can mushroom soup
Mix cheese with the cracker crumbs. Add asparagus liquid to the soup and heat. Layer casserole in 1 & ? quart greased dish beginning with cracker mixture, asparagus spears, sliced eggs and mushroom mixture. Repeat. End with cracker mixture (3rd time) Drizzle butter over the final mixture.
Bake 35-45 minutes until hot and bubbly.
May freeze. Serves 8
Broccoli Casserole
16 ounces of frozen chopped broccoli thawed
1 can cream of mushroom soup
1-cup mayonnaise
8 ounces shredded sharp cheddar cheese
2 tablespoons chopped onion
Salt and pepper to taste
Mix all together and place in a greased casserole dish. Bake at 350 degrees until browned (about 30 – 45 minutes)
Tagliarini
1 8-oz. Package Egg Noodles
1 Onion, chopped
1 clove Garlic, minced
1 Green Bell Pepper, Chopped
Olive Oil
1 small can Tomatoes
1 lb. Hamburger
Salt to taste
Dash Red pepper (Cayenne)
1 can Whole Kernel Corn
1 can Ripe Olives, and liquid
? lb. Cheddar Cheese, grated
Cook noodles according to package directions, drain. Fry onions, garlic and bell pepper in a small amount of olive oil until tender, add tomatoes and cook for 10 minutes.
Add noodles.
Brown hamburger with salt and red pepper in 2 tablespoons of olive oil (you may omit the oil if desired). Add noodle mixture and corn; cook for 10 minutes. Chop ripe olives, reserving 4 or 5 to place on top of the casserole.
Add chopped olives and half the olive liquid to the noodle mixture.
Add about 2/3 of the cheddar cheese to the casserole. Mix well.
Put into a 3 quart casserole dish, sprinkle remaining grated cheddar cheese on top and garnish with reserved whole olives.
Bake in a 350-degree oven for 1-hour.

Noodles Milanese
1 medium Onion, chopped
1 clove Garlic, minced
2 TBS Olive Oil
1 lb Ground Beef
1 3 or 4-oz. Can Mushrooms, sliced
1 8-oz, can Tomto Sauce
1 can Tomato Paste
1 Bay leaf
1 tsp. Oregano
2 tsp. Salt
2 Eggs
1 8-oz. Package Wide Egg noodles, cooked and
drained
1 10-oz. Frozen Chopped Spinach, thawed and
drained
? cup chopped Parsley
1 cup Ricotta Cheese,
or 1/2 lb. Cream Cheese
? cup grated Parmesan Cheese
1 tsp. Basil
4 slices American Cheese
Brown onion and garlic lightly in 1 tablespoon olive oil in medium frypan. Add ground beef; cook until brown. Stir in mushrooms and liquid, tomato sauch, tomato paste, bay leaf, oregano and 1 teaspoon salt; simmer 15 minutes.
Beat one egg in a medium bowl. Pour over noodles; mix well. Beat second egg in same bowl; add spinach, 1 tablespoo of olive oil, parsley, Ricotta Cheese, Parmesan Chese, 1 tablespoon Salt and basil. Mix well
Pour half the tomato-beef mixture into a 2 to 3 quart baking dish. Layer half the noodles on the sauce. Spread with the spinach-cheese mixture; repeat the noodle layer. Top with remaining tomato-beef mixture; cover with a lid or foil.
Bake in 350-degree oven for 45 minutes.
Remove from oven. Arrange the American Chees slices to make squares on top. Bake 5 minutes longer or until the cheese is melted.
Yield: 6 Servings

Sausage, Beef & Bean Casserole
1 pound sweet or hot Italian pork sausage, cut into 1-inch pieces
1/2 pound ground beef
1 small onion, chopped (about 1/4 cup)
1 bag (about 6 ounces) fresh baby spinach
1 can (10 3/4 ounces) Campbell's? Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
1/4 cup milk
1 can (about 15 ounces) white kidney beans (cannellini), rinsed and drained
1 cup Pepperidge Farm? Herb Seasoned Stuffing
1/2 cup crumbled blue cheese or shredded Cheddar cheese (about 2 ounces)
* Heat the oven to 350°F.
* Cook the sausage, beef and onion in a 12-inch oven-safe skillet until the sausage and beef are well browned, stirring often to separate the beef. Pour off any fat. Stir in the spinach and cook until it's wilted.
* Stir the soup, milk and beans in the skillet.
* Stir the stuffing and cheese in a small bowl. Sprinkle the stuffing mixture around the inside edge of the skillet.
* Bake for 30 minutes or until the sausage mixture is hot and bubbling.

1/2 lb. ground beef
1 small onion, chopped
1 pkg. (14-1/2 oz.) KRAFT Macaroni & Cheese Family Size Dinner
1 cup TACO BELL? HOME ORIGINALS? Thick 'N Chunky Salsa
1 can (11 oz.) whole kernel corn with sweet peppers, drained 2 cups coarsely broken tortilla chips Make It
PREHEAT oven to 400°F. Prepare Dinner in large saucepan as directed on package.
MEANWHILE, brown meat in large skillet on medium heat; drain. Add onion; cook until crisp-tender, stirring occasionally. Add meat mixture, salsa and corn to prepared Dinner; mix lightly. Spoon into shallow baking dish; sprinkle with chips.

Casserole: & Stews-: Chicken
Cut Chicken into bite sized pieces and brown with some garlic and onion in a little oil and transfer to casserole dish.
Add diced Peppers and other vegetables.
Use a can of mushroom soup as a liquid.
Cover with bread crumbs and grated cheese and bake in a 180C for about 20 minutes until bubbling hot and the cheese has started to brown.
Serve with mashed potatoes.
