can you make fish fingers/sticks with salmon or tilapia?!

Question: Can you make fish fingers/sticks with salmon or tilapia?
As a child, I love to eat fish sticks (or fish fingers) during school lunches. As an adult, I decide to make fish sticks at home. However, I'm wondering if you can make fish sticks with salmon and/or tilapia?

Answers:

You could use salmon, but I'm not sure about tilapia.
