What is the reason for celery in spag bol?!


Question: What is the reason for celery in spag bol?
I am cooking Spaghetti Bolognese and was wondering what the point in adding celery was.
I hate celery and can't see how it would contribute to the flavour.
Can I just omit it?

Onion, celery and carrot, all finely chopped and sauteed in extravirgin olive oil, are the base of many traditional Italian recipes. You can surely do without the celery (or the carrot), as many Italians also do (especially in the south), but the taste will definitely be different.

I suggest that you try it both ways and decide which one you like best. And don't worry, your bolognese will not taste like raw celery once cooked :-)

It is a part of an aromatic base that provides flavor. If you make the bol sauce correctly, all the aromatic vegetables will be cooked down to mush from the long cooking time and you probably wouldn't know it was in it. To the refined palette, the essential oils in the celery does impart a nice crisp but very subtle overtone that contrasts nicely against the bold and hearty components of the sauce, so subtle that if you leave it out, most people wouldn't know the difference. I encourage you to put it in though.

Well, celery provides texture. You can add shredded carrots in celery's absence.

You're right I don't like cooked celery either. But I love it when its fresh and raw and makes that crackle sound.

I'ma have me some celery now.



Generally it is used to improve flavour - Italians and others for that matter use a lot of Celery in their dishes
I finely chop my celery into 2mm dice and it virtually disappears in the bolognese



I think the recipes that mention using celery or carrots in spag bol are for budget conscious people, it means that you use less meat because the vegies bulk it up.



It's a base flavour enhancer, you can leave it out if you want



I never put celery in spag bol and it tastes fine, so just leave it out.



I also hate celery and always just leave it out of any recipes. You don't have to add it.



Perhaps someone mistook celery for leeks. some finely chopped leek is great.
