My pseudo-Thai chicken salad, darling!!
Serves 2
Limes
1/4 cup asian sesame oil
1 Tblsp. peeled fresh ginger
1 tsp. curry powder
4 cups mixed salad greens
1 small red bell pepper, sliced thin
2 cups cubed cooked chicken pieces
1/3 cup coarsely chopped honey roasted peanuts
Salt and pepper
Hot cooked rice (I like jasmine or basmati for this)
Grate enough lime peel to make 1/2 tsp of peel and squeeze the limes to produce 3 Tblsp. of juice. Whisk the oil, ginger, curry powder, lime peel, and lime juice together in a small bowl and season with a little salt and pepper.
Divide the salad between the plates and sprinkle with the sliced red bell pepper, and divide the rice between the plates. Heat the oil mixture in a skillet and toss the chicken in the mixture to heat through - about two to three minutes. Pour the chicken and sauce over the rice and salad, and sprinkle with the chopped peanuts.

Eggplant Parmesan Recipe... my roommate in college made it for all the girls and there was not a single piece left. It became one of our favorite dishes. Easy to make, not too unhealthy, can make a lot and just eat throughout the week... and SO tasty!! :)
Ingredients:
* 3 eggplant, peeled and thinly sliced
* 2 eggs, beaten
* 4 cups Italian seasoned bread crumbs
* 6 cups spaghetti sauce, divided
* 1 (16 ounce) package mozzarella cheese, shredded and divided
* 1/2 cup grated Parmesan cheese, divided
* 1/2 teaspoon dried basil
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
3. In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
4. Bake in preheated oven for 35 minutes, or until golden brown.
Spicy bruscetta chicken bake
This nouveau casserole comes together in no time and is high in flavor and nutrition without feeling like it
You can substitute dark meat chicken thighs if you and your family prefer, simply bake the casserole longer, until the dark meat is done.
Ingredients
1 1/2 lb. boneless skinless chicken breast cut into bite-size pieces
1 cup shredded pepper jack cheese
1 14 1/2 ounce can diced fire-roasted tomatoes
1 6 ounce package Stove Top for chicken
1/2 cup water
3 cloves garlic, minced
1 tablespoon Italian seasoning, Dell'Aple recommended
Big pinch kosher salt
Pinch red pepper flakes
Method
Heat oven to 350 and spray a 9 x 13 pan with Pam
Lay the chicken in an even layer in the bottom of the pan and sprinkle with the cheese.
Mix tomatoes, stuffing mix, water, garlic, and Italian seasoning, salt, and red pepper flakes together until stuffing mix is moistened. Mound the stuffing mixture on top of the chicken and the cheese in an even layer. Bake 30 minutes or just to the point when the chicken turns opaque.
Shrimp, Okra and Andouille Sausage Gumbo
Makes 8 servings
Ingredients:
1/2 cup vegetable oil
1/2 cup all purpose flour
4 celery stalks, coarsely chopped
2 medium onions, coarsely chopped
2 green bell peppers, chopped
2 bay leaves
2 teaspoons salt
2 teaspoons dried oregano, crumbled
1/2 teaspoon cayenne pepper
1/2 teaspoon bayou cajun seasoning
5 (8 ounce) bottles clam juice
1 can (28 ounces) plum tomatoes, drained and chopped
1 pound smoked andouille or kielbasa sausage, halved lengthwise then sliced 1/4
inch thick
1/2 pound okra, trimmed and cut crosswise into 1/4-inch-thick slices
2 pounds uncooked medium shrimp, peeled and deveined
1 small can lumped crab meat drained
freshly cooked long-grain rice
2 tomatoes, seeded and diced
Prep:
Heat oil in a heavy large Dutch oven over high heat until almost smoking. Add
flour and stir until dark brown and fragrant, about 8 minutes. Immediately add
celery, onions and bell peppers. Cook 5 minutes, stirring and scraping bottom of
pan often.
Mix in bay leaves, salt, oregano and cayenne. Add clam juice, canned tomatoes
and sausage. Boil 15 minutes. Add okra, reduce heat and simmer until okra is
tender, about 15 minutes
Add shrimp to gumbo and simmer until just cooked through, about 3 minutes. Mound
rice in soup bowls. Ladle gumbo over. Garnish with tomatoes.
Fettuccine Alfredo
Ingredients
8 ounces dried fettuccine
2 tablespoons butter
1 cup whipping cream or milk
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
Grated or finely shredded Parmesan cheese (optional)
Directions
1. Cook fettuccine according to package directions.
2. Meanwhile, in a large saucepan melt butter. Add cream, salt, and pepper. Bring to boiling. Reduce heat and boil gently for 3 to 5 minutes or until mixture begins to thicken. Remove from heat and stir in 1/2 cup grated Parmesan cheese. Drain pasta. Add pasta to hot sauce. Toss to combine. Transfer to warm serving dish. Serve immediately. If desired, sprinkle with additional Parmesan cheese, Makes 4
i have plenty:
chicken breast recipes
cut them in 1/2 then smear with tomato puree
and thinly sliced mozzarella and bake in the oven
at 180-200 degrees for about 30 Min's or until cheese
is melted and chicken is brown and fully cooked. x
cut in half smear between Philadelphia then put 2 1/2's
together and wrap in bacon or parma ham and bake in the oven for
30 min's or until chicken is fully cooked and bacon or parma ham is
crispy and philadelphia has melted. x
I don't eat meat, so I do eat lots of
fish and seafood. Because I live alone,
I tend to make things that are fast
and simple most of the time.

Don't know if you and your family
like shrimp, but here it is...
1 pound large fresh shrimp
3 large cloves garlic, minced
1/4 cup olive oil
1/2 cup unsalted butter
1/4 cup dry white wine
1/4 tsp. dried crushed red pepper (optional)
1/4 cup chopped fresh parsley or you can use dried
Peel shrimp and devein.
In a large skillet, saute minced garlic in hot oil for 1 to 2 minutes. Add the butter and stir until it melts. Add the shrimp and cook for 1 minute.
Stir in wine and red pepper; reduce heat, and simmer 1 to 2 minutes or until the shrimp turns pink.
Sprinkle with the fresh parsley and serve over your choice of rice or pasta.
* I also serve it with Parmesan cheese sprinkled over it.
Makes 4 servings

Also, why not make Vietnamese rice paper rolls? They are so healthy, and fairly easy to make, just the chopping up of veges that's a bit fiddly but they're great!!!!
