Question: I'm looking for a good bean recipe?
Beans are really healthy for you so I'm trying to eat more of them but i can't find any good recipes. I hate bean salads and i'm not too crazy about baked beans with meat in it. So do you have any suggestions for how I can add beans to my diet?? Thanks!!!!!

We like bean dishes too. They are very healthy and easy to prepare. Our favorite is Plaki. Plaki is a Mediterranean dish very popular in Greece. it can be served hot, or cold directly from the fridge. Rice pilaf isprobably the only side dish that is served with it. you can use canned been or prepare the beens from scratch by soaking it in water and then boiling it until done. Always discard the water you boil the beans in never use it in the meal. Here is the link to the video instructions and written recipe.

The following recipe isn't just beans, though it has a lot of beans in it. But you could adjust it to your own tastes easily, and even change, or omit, the meat if you like.

Southwest Stew

INGREDIENTS (Servings 8)

* 2 pounds ground beef (ground or chunked; beef, pork or chicken)
* 1 1/2 cups diced onion
* 1 (28 ounce) can whole peeled tomatoes, chopped, juice reserved
* 1 (15 ounce) can pinto beans, rinsed and drained
* 1 (15 ounce) can black beans, rinsed and drained
* 1 (16 ounce) can whole kernel corn, drained
* 1 cup picante sauce
* 1 tablespoon Chili Powder (or to taste)
* Red Pepper or Hot Sauce to taste
* 1/2 teaspoon garlic powder
* 1/2 teaspoon black pepper
* salt to taste
* Shredded Cheddar cheese & chopped Scallion for garnish

DIRECTIONS

1. In skillet, brown beef and onions. Drain any excess fat. Add remaining ingredients and bring to a boil. Simmer, covered, for 15-20 minutes. Garnish with shredded cheddar cheese, if desired.



There's always chili for using pinto beans. I'm also a huge fan of black beans, I'll put them in almost any rice dish I make. Vegetarian black beans and rice, Spanish rice and beans, Mexican rice and beans. Every once in a while I do red beans and rice when I'm in the mood for andouille sausage. You can't really go wrong with anything that involves beans, rice and cheese.



Here is a good recipe without the meat (that's what you want, isn't it?) Easy to make and only small amount of ingredients. Enjoy!

Black Bean Pie

1 can black beans, (16 oz.) rinsed and drained
1/4 cup reduced-sodium vegetable broth
2 t. olive oil
1 cup diced red onions
3 cloves garlic, minced
1/4 t. chili powder
2 t. ground cumin
1 t. canned green chili peppers, chopped
2 drops hot pepper sauce, (2-3 drops)
1/2 cup fat-free egg substitute
1 9” pie crust, pre-baked
1/2 cup salsa
1/2 cup shredded reduced-fat Monterey Jack cheese

In a food processor, purée 1/2 cup of the beans and the broth until smooth. Set aside. In a medium non-stick skillet over medium heat, warm the oil. Add the onions. Saute for 4 mins, or until soft. Add the garlic, chili powder, cumin, chili peppers, hot-pepper sauce and puréed beans. Bring to a simmer. Stir in the remaining beans, cover and simmer for 5 mins, or until heated through. Remove from the heat and set aside to cool. Stir in the egg substitute. Preheat the oven to 400 F. Pour the bean mix into the pie crust and bake for 10 mins. Spread the salsa evenly over the bean mix. Sprinkle with the Monterey Jack. Reduce the oven temperature to 325 F. and bake for 15 mins., or until the cheese is bubbly. Remove from the oven and cool for 5 mins. Cut into wedges and serve.



Ham and bean soup is good. Slow cooking pinto beans. Refried beans with cheese and/or sour cream. Chili. If you're using dried beans you have to sort through them carefully because it hurts to bite down hard on pieces of rock the size of a bb.



<3 Pon, I add two types of beans when I make minestrone, I like the texture of the bolotti beans in the minestrone.
