Question: Baking time for a cheesecake in 2 pans instead of one?
My cheesecake recipe calls for a 9 inch springform pan baked for 50-55 min, but I only have 2 8 inch cake pans. I split the recipe between the 2 pans. How long would this version take? Like half hour?

Answers:

I would say about 40 minutes.
Check the cheesecakes at 30 minutes, when they are done, they should be turning golden around the edge of the top and be firm in the center of the pans. If they are turning golden turn off the oven and leave the cheesecakes in the oven with the door open about 25 degrees. This will allow the cheesecakes to cook a little longer as well as allowing the oven to cool down slowly. It lso helps the cheesecakes to finish baking in the center.



I would guess that the batter comes up to less than half of the 8 inch pan, so I'd check them after 25 minutes. A well baked cheesecake is not stiff in the center. There is a little bit of a jiggle when shaken lightly, golden brown edges are fine.



30-40 mins.
