Question: Have you ever tried Hominy Cheese Patties?
As a bread substitute? - one and one-half c. canned hominy with one- fourth c. liquid from can. Grind in a blender until smooth. Transfer to a mixing bowl and add: three- fourth c. yellow cornmeal, one c. cheese, grated or crumbled, one T. brown sugar, one-fourth t. salt. Mix well. Form into 12 small balls and carefully flatten into 2-3 inch patties. Fry on lightly greased griddle over med-high heat, or roast on grill, turning as first side begins to brown. The cheese will make it chewy. Serve in place of bread with meal or as a snack. Makes 12.
