Question: What are some simple recipes I can give to young people newly on their own?
I'm making a home recipe book for my kids who are moving out soon. I'm looking for things that are pretty quick and simple to cook and not too expensive. I've already included some of their favorites that I make (lasagna, gumbo, basil/meat sauce and pasta, chili, etc.), but I want to include things that are practical and inexpensive that they can make for one or two people. Part of the goal is for them to be able to save money, eat well, and not rely too much on prepackaged foods. Do you have any quick, fresh, inexpensive favorites you'd be willing to share? Thanks.

Answers:

This is one that I got from my new mother-in-law when we first got married. It's easy and makes enough for leftovers.

Hamburger Casserole

1 pound hamburger (more for heartier casserole)
1 tsp. onion powder
1 bag of frozen Crispy Crowns of Tater Tots
1 family sized can of Cream of Mushroom Soup
1 pound shredded Mozzarella cheese
1 cup milk

Brown the hamburger and season with the onion powder. Drain and mix with the soup and milk. Spread the frozen potatoes in the bottom of a large casserole dish, then pour the soup mixture over the top. Cover casserole with lid or aluminum foil. Bake for 40 minutes at 350 degrees. Remove from the oven then top with cheese. Return to the oven for another 10 minutes or until the cheese is melted and slightly browned. Let the casserole rest for about 10 minutes before cutting into pieces. This is good served with garlic bread and a salad.

You can also add extras like mushrooms or onions, etc. to change it more to your taste, but this is the easiest version.

This next I got from a friend. It's a breakfast casserole, but I actually make it for supper most of the time.

Sausage Breakfast Casserole

1 pound ground sausage
1 dozen eggs
1 can crescent rolls
1/2 cup of milk
1 pound shredded cheddar cheese

Brown and drain the sausage. While the sausage cooks, open the crescent rolls and lay in the bottom of the casserole dish to make a crust. Press the seams together then sprinkle the cooked sausage over the rolls. Beat the eggs with the milk and add salt and pepper to taste. Pour eggs over the sausage. Cover and bake for 45 minutes at 350 degrees. Remove and top with cheese. Bake another 10 minutes or until the cheese is melted. Again let rest about 10 minutes before cutting into pieces.

Again, you can add things like onions and mushrooms, or substitute ham or bacon.

These books are made specifically for beginning/novice cooks. They use minimal ingredients, easy technique and give maximum results. Condiments & seasoning don't count as specific ingredients.

Example: Baked Chicken Dish (3 Ingredient recipe)

1 chicken breast
6-8 tips of asparagus
1 large red potato

-Slice up chicken breast & potato into 1 inch thick pcs. Place in an oiled baking dish.
-Add in asparagus tips. Drizzle with olive oil. Sprinkle with salt & pepper
-Bake uncovered at 350 degrees for about 25 min. or until chicken is done.

What a great mom you are. I'm a personal chef. My parents made sure we knew how to cook before we left home too. They started having us cook when we were little kids.



I buy a 10 pound bag of russets and bake 10 at a time. The first night is baked potato, the rest of the week will be potato salad, home fries with eggs for breakfast, or shredded hash browns. I then make mashed with veggies and some kind of meat or fish on the side. Shepard's pie is another good recipe to make with the potatoes. I might make scalloped pots with sliced onions. Potato wedges in the oven like french fries. I think that covers the week with just 10 potatoes. Potatoes are very versatile and inexpensive.



Scrambled Eggs with Bacon/Ham on brown toast is a good healthy snack.

Oven-Baked Carrot Fries

1 1/2 lbs. carrots

1 tsp. sugar

2 Tbsp. olive oil

1/2 tsp. salt

2 Tbsp. finely chopped pinch of pepper

fresh rosemary

Preheat oven to 425. Line a shallow pan with foil. Using a sharp knife, slice away the tip and end of each carrot; peel each completely. Cut carrots in half cross-wise, then cut length-wise, then cut length-wise again.

In a mixing bowl, combine the carrot sticks, oil, rosemary, salt and pepper. Stir till all are evenly coated. Place carrots in pan, spreading sticks out as much as possible. Bake for 20 minutes or until carrots are tender. Serve hot or at room temperature.

Makes 4 servings

Method one: 1 cup of cold milk in a jar with a lid. Add 2 TB flour. Shake till dissolved. Put in a pot and heat to boiling stirring more often the hotter it gets. Boil one minute stirring constantly. Add 1 tsp butter or margarine and salt and pepper to taste.

Method two: If you are adding anything to the sauce, such as broccoli or chipped beef, heat the additional ingredient in a pot with 1 TB butter or margarine for each cup of sauce. Remove from heat when butter is melted. Stir in 2 TB flour for each cup of white sauce. Then slowly at first (to avoid lumps) stir in a cup of milk for each cup of sauce. Bring to a boil, stirring more often the hotter it gets. Then boil one minute stirring constantly.

Notes:
1TB cornstarch can be added in place of 2TB flour. It makes lumping less likely, but I find it difficult to reheat leftovers.

If it gets lumpy, just take it off the heat and whisk it.

If you are adding cheese or hard-boiled eggs, add them after the boiling is done and the sauce is removed from the stove.

Variations:

Add cooked potatoes and cheese for potato soup,broccoli and cheese for broccoli soup, celery for celery soup ( I cook the raw thin-sliced celery in the butter before adding the flour)

Add hard boiled eggs and serve over toast for breakfast.

Add chicken buillion and substitute it in recipes calling for cream of chicken soup.

Add chipped beef, hamburger or sausage for breakfast gravies.

Add cheese and macaroni for mac and cheese.

Add sugar to the flour and make custard using method one. Add the flavoring at the end with the butter. If you want chocolate, add cocoa to the sugar first. Chocolate is good with peanut butter stirred in at the end. For butterscotch, do the vanilla with brown sugar.

Pour over anything you want "creamed"-peas, carrots, onions.

Use canned broth instead of milk for gravy

Use beet juice instead of milk and add vinegar and sugar to taste for harvard beets.

I'm sure there are lots more uses, but you get the idea how basic this is. Once you master it, it saves money at the grocery store.
