Is there a perfect roast beef?
I live in Thailand and we seriously have problems with good meat over here, as they kill the beast and then sell it. No hanging time at all, so you can imagine its quite tough.
So what I tend to do is, hold my meat in a seive in the fridge for a couple of weeks. When your ready to cook it, boil it in water for an hour (depending on size), then another half hour in gravy. Lovely and tender!
Yorkshire Puddings:
5oz flour
3 eggs
1/2pint Milk
Pinch of salt
Mix together. Do not over beat the batter! Make sure your pans are well heated with a little oil before adding mixture. Put back in hot oven for about 20mins. Makes 24 puds.
