I want to start cooking healthy meals for my family but I don't like veggies?!
There are millions of "healthy recipes" online but my problem is that I absolutely hate veggies. I am 24 and haven't eaten one in my life, besides to taste them every one in a while. (At least I try, right?) I can compromise with certain ones....peppers and celery in some cases...but that's not good enough for me. How can I add veggies to dinner when the smell of them make me gag?

I would stay away from canned veggies. Try oven roasted, grilled or steamed with some fresh lemon juice.
Walk around the Produce section of the market, & try a new vegetable each week. You never know what you might like unless you try.
Salad bars - My local market has a great salad bar. You can add pasta & start with a pasta salad. Let the kids pick what they like, but try everything just once.
Take a multi vitamin. You are probably missing out on vital nutrients you need.
Shop in the outer aisles of the market. All the processed, packaged, canned foods & junk food are in the center of the store.
There are so many delicious vegetables available - try artichokes, broccoli, brussels sprouts, green beans, peas, asparagus etc.
Try stir frys. Chinese dishes like beef & broccoli, moo shoo chicken. So many choices.
Tacos can be fairly healthy if you use lean ground beef, fish or shrimp, & top it with diced tomatoes, sliced avocado and or shredded cabbage.

Box cooking normally contains lots of sodium and preservatives which is the reason it is usually is considered not healthy. A few ways to make veggies easier to eat is to put different cheeses (parmesan, mozzarella, velveta) on them as well as butter/ margarine. Eating your vegetable mixed into the dishes also dilutes the taste of them as well in cases like soup, stew, or pot pies. Fruits are also a great way to eat healthier.

My neighbor uses a food processor to blend his veggies to pulp and then hides them in marinara sauce.
Unfortunately I think you need to tough out some veggies! Not only are they good for you but they're vital to your young children who need to learn about healthy eating and good meal options.
There's so many veggies out there, maybe you need to try a wider variety to see if there are some you can handle.
You've said you like peppers, so add them to every dish you can. An easy and healthy meal you can put together quickly is some cooked chicken, sliced peppers & onions with some egg noodles. Stir fry together with a dash of soy sauce, garlic and sweet chilli topped with sesame seeds.
Casseroles are an easy way to hide vegetables, usually because they cook for so long the taste isn't as strong. Use a variety of potatoes, leeks, carrots, celery & beans. Use a base of canned diced tomatoes, garlic and a splash of red wine for the sauce and use whatever protein you like (chicken, beef, lamb)
If you like hamburgers, make home made ones from scratch and add very fine chopped vegetables (onion, capsicum, carrot, zucchini) to the meat patties - not only will this make them healthy but the vegetables will be well disguised amongst the mince so you won't taste it as much. Add eggs, breadcrumbs, salt & pepper, garlic, bbq sauce and tomato sauce to the mince mixture for extra flavour.
Pizza's can be made healthier by using pita bread for the base as opposed to normal pizza dough. Cover with tomato paste and top with onion, peppers, tomatoes, sausage and cheese (use the sausage sparingly and use low fat cheese for a healthier option)
I'm wondering if you're ok with salad? Like lettuce, cucumber etc if so tacos, burritos and chicken wraps are excellent - just don't load with heaps of extras like sour cream & cheese (a little bit is ok in moderation)
Basically, you can modify any recipe to omit or add vegetables. Sometimes our taste buds take a bit to adjust but honestly there are a lot of veggies out there that are delicious! If you're still finding it difficult, try to include a lot of fresh fruit into your diets - ie: instead of pie and ice-cream for dessert, serve up some sliced banana with yogurt and a drizzle of honey.
