Can I subsitute corn starch for flour?!


Question: Can I subsitute corn starch for flour?
I am making a homemade chicken pot pie. The white sauce calls for 6 Tbsp flour but I ran out. Can I substitute corn starch for flour?

Here are some guidelines when using flour and cornstarch for thickening sauces...............

Generally, for each cup of medium-thick sauce, use two tablespoons flour mixed with 1/4 cup cold water. Or use one tablespoon cornstarch mixed with one tablespoon cold water. Be sure to thoroughly mix the water with the starch (the flour or cornstarch) to prevent lumps. After stirring the combined starch and water into the liquid to be thickened, cook and stir over medium heat until thickened and bubbly. Cook and stir one minute more for flour and two minutes more for cornstarch to completely cook the starch........

So 2 to 1....

Use 3 tablespoons cornstarch and mix with 3 tablespoons water...

it's fine to use cornstarch instead of flour in this recipe, but be sure to cut the amount in half. cornstarch goes a long way as a thickening agen. its' also important to note that cornstarch will only dissolve in cold liquid, so you need to keep this in mind. i would par cook the liquid containing the cornstarch until it begins to thicken before mixing it with the other ingredients and putting it in the pie crust.
