Question: Have 1 lb. ham chunks - need some healthy dinner ideas?
I'm on a quest to finally use up all of the frozen leftover meats in our freezer. So I took out a 1 lb. package of ham (it's roughly chunked - whatever I got off the bone) and need HEALTHY (low fat & relatively low calorie) ideas to make with it. Can't involve beans since I am also going to make chili in the next few days and I don't want to make bean dishes too frequently. Casseroles tend to be really high in fat and starches so they are not exactly low in calories. Does anyone have any ideas? You don't have to post recipes, just give me some suggestions.

scrambled eggs and ham make a good omlette, and who says you can't have breakfast, and make it a dinner, and add veggie's on top, like green onions, or mushroom, and green pepper's..and it is healthy//



Scramble some eggs, add some chopped onions, peppers, (mushrooms, if you like them) and the ham (cut into small bite sized pieces). You can add spinach, feta cheese or any type of cheese if you want or leave out the cheese and add tomatoes or anything that suits your taste. This will be a healthy meal which doesn't have a lot of calories. Enjoy!



Western Omelet
Ingredients:
?2 tablespoons butter
?6 large eggs
?1/4 cup finely chopped green bell pepper
?1/3 cup finely chopped onion
?3/4 cup milk
?3/4 cup chopped cooked ham
?3/4 teaspoon salt
?dash pepper
?ketchup
Preparation:
In skillet melt butter. Beat eggs and whisk in remaining ingredients. Pour mixture into hot skillet. Cook, stirring to cook evenly. Turn and cook other side. Serve while still somewhat moist and creamy. Cook in smaller batches for Western sandwiches. Serve Western sandwiches and Western omelet with ketchup.

make a frittata (essentially a messy omelet). cook the ham in a pan with some diced potatoes, pepper, mushrooms, and whatever other veggies you want. then add in as much scrambled eggs as you need, mix in shredded cheese, and BOOM. tasty, quick, and easy meal that everyone will love.



i;d make some homemade pea soup or buy some already made and add the ham to it.

you can also made a ham salad by chopping it up a bit more, adding mayo, chopped onion, black pepper and a dab of mustart.



You can make a scalloped potato and ham casserole. Maybe try macaroni and ham salad. Use it in any pasta dish that uses chicken or beef. Hope these suggestions help you.

What about lentil soup?



Chop the ham small and start it boiling in about 6 cups of water. Add celery diced, 3 carrots grated fine, an onion diced and one pound of split peas. After the pot comes to a boil reduce the temperature to let it simmer for about an hour and a half, then run the hot soup through a blender to make it smooth like the restaurants make it. Viola...of course you could sub lentils for the split peas, or navy beans or northern beans, or 7 bean soup, or you could take and boil some potatoes, smash em up really well and add just your soup juice and milk to make cream of potato soup then add the other ingredients back in after you have the soup the way you like it. Or instead of any of those other ideas you could add spinach and cabbage to the stock you started with and still have a dynamite vegetable soup with ham in it.
