Question: How to make SOFT chocolate chip cookies?
The type that is not crunchy but CHEWY and loaded with chocolate.

tips or recipes would be awesome.

Answers:

It's a delicate balance with the flour and butter. NEVER melt the butter, ALWAYS cream the sugar with SOLID butter! You can also try refrigerating the dough first, too, so that you can watch them cook better. Use fresh baking soda!

Take them out before they look done in the center. The telltale is very very slight golden-brown color around the edges. Take them out when you see that.



Award Winning Soft Chocolate Chip Cookies

4 1/2 cups all-purpose flour
2 t. baking soda
2 cups butter, softened
1 1/2 cups packed brown sugar
1/2 cup white sugar
2 (3.4 oz.) pkgs instant vanilla pudding mix
4 eggs
2 t. vanilla extract
4 cups semisweet chocolate chips
2 cups chopped walnuts (optional)

Preheat oven to 350 F. Sift together the flour and baking soda, set aside. In a large bowl, cream together the butter, brown sugar, and white sugar. Beat in the instant pudding mix until blended. Stir in the eggs and vanilla. Blend in the flour mix. Finally, stir in the chocolate chips and nuts. Drop cookies by rounded spoonfuls onto ungreased cookie sheets. Bake for 10-12 mins in the preheated oven. Edges should be golden brown. You can use any flavor pudding you like for this recipe. Makes 6 dozen (72 servings).



Many of the online recipes can be chewy if you under-cook them just a bit, and then cool them on racks. Leaving them on the tray, continues the baking, but I personally pull out the racks/shelves from my toaster (when they're cool), flip them (so the cookies don't touch the table), and let them rest.
