Question: Challenge 2: What is the cheapest healthy meal you can make for a family of four?
I think this is quite tough. I can quite easily feed 4 people for $15 if I was so inclined, the lowest I've been able to go and still be reasonably nutritious is:

500gm of spiral pasta ($2).....but I don't use all of it
2 tins of whole peeled tomatoes ($2)
2 large onions ($1)
10 large mushrooms ($2)
1 zucchini ($1)

Can you beat $8???

Answers:

You can buy 4 lbs of beans, 4 lbs of rice and 5 lbs of apples for ~$12-that will feed 4 people for several days.

mushrooms (1.50)
eggs (1.00 for 6)
Soy sauce (1.75 small bottle)
Veggies (2)

fried rice with veggies and soy sauce.... $7.25



Egg fried rice. Here you can use only egg and rice and prepare simply.
