What is the best way to make pancakes?!

The best way is definitely not store bought. The best recipes, I find, use buttermilk.
Try this recipe.
2 eggs
2 cups all-purpose flour, sifted
2 Tbs. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 1/2 cups buttermilk
4 Tbs. (1/2 stick) unsalted butter, melted
1/2 tsp. vanilla extract
Butter or bacon grease (if you wanna go Southern) for cooking
Real maple syrup for serving (not Aunt J!). Grade A is lighter and less super sweet. Grade B is stronger and sweeter. I prefer A.
In a bowl, using an electric mixer, beat the eggs on medium speed until frothy. Add the flour, sugar, baking powder, baking soda, salt, buttermilk, melted butter and vanilla. Stir just until the batter is smooth and no lumps of flour remain; do not overbeat.
Heat a griddle over medium-high heat until a few drops of water flicked onto the surface skitter across it. Put a square of butter in the pan or 1/2 tsp bacon grease.
Pour about 1/3 cup of the batter into each mold. Cook until bubbles form on top and the batter is set, about 2 minutes. Remove the molds and, using a spatula, flip the pancakes. Cook until golden brown on the other side, about 2 minutes more. Keep warm until all the pancakes are cooked.
The old milk, baking powder, flour, and eggs is definitely best.
But I like buckwheat pancakes and you can find those in a mix at the store in the ORGANIC section. You mix milk, eggs, and a litle honey with that mix and the pancakes are terrific. I dump blueberries or strawberries soaked in sugar sometimes too.
Most regular mixes use water because they have POWDERED milk in them. Do you like to drink powdered milk or would you rather have regular?

With the mix, put your wanted amount into a bowl (medium sized) and add a little milk, an egg, and a few teaspoons of oil. Mix it up so it is saluted and thorough throughout. Let the mix sit for about 10 min. In the meantime, heat up a pancake griddle. After 10 minutes, pour the mix into pancake sized disks. When the bottom side is brown, flip over and repeat. Do for each pancake.
My own cooking
If you MUST use store-bought, use archer farms or similar. Not Aunt Jemima.
But the best pancakes (and the cheapest!) are homemade. :)
