Is one of the ingredients in your recipe lemon juice? that should be doing the job, it naturally contains citric acid which is a food preservative. Use fresh lemons rather than bottled. You can also drizzle a tiny bit of olive oil before covering to refrigerate.
garlic has antimicrobial agents in it that help prevent the growth of bacteria or mold
cinnamon does too but i dont know if youd want that in your hummus
actually a lot of other spices can preserve food too

in the good old days they smoked the meat in a smoke house with a variety of herbs such as a heck of a lot of salt and pepper. :) look into this method and see if smoking it would be a possibility maybe over an open fire or conventional oven?
