Good side(s) dish for turkey meatloaf stuffed peppers?!


Question: Good side(s) dish for turkey meatloaf stuffed peppers?
I am making peppers stuffed with turkey meatloaf tomorrow (I know it sounds wierd, I'm allergic to beef though :) and I cant think of side dishes to go with it. The peppers make the meatloaf in smaller portions and summery so I dont want to use my regular meatloaf side dishes as they will be a bit too heavy for summer.

COLE SLAW

1 medium-sized head green cabbage
2 carrots, thinly shredded
1 onion
1 green pepper
1 c. sugar
1 c. vinegar
1 tsp. salt
1 tablespoon grated horseradish
1 tsp. mustard seed
1 tsp. celery seed
1 tsp. turmeric

Shred the cabbage and carrots, then chop them up a bit. Chop the green pepper and onion and combine it with the cabbage. Boil together the vinegar, sugar, salt, and spices, only until they are well blended. Pour over the slaw and allow it to set for several hours before serving. Store in refrigerator. This is good served with baked beans or as a hot dog relish.



Pureed celery root, broiled or grilled artichoke hearts, butter beans sauteed in olive oil with garlic and parsley. Some argentine style chimichuri sauce would be nice too.



Steamed potatoes, green garden peas and carrots.



Mashed potatoes and cream corn don't forget the cherry pie for desert!



How about rice and green beans? Scalloped potatoes would also be good. Happy cooking!
