First time cooking steak, how do I do it? Petite sirloin. No grill access?!
Anyways, I've been sick with the flu for about a week and I'm starting to feel decent. I want to make my husband a nice dinner tomorrow night as a thank you for taking care of me. He bought steak and potatoes to make for dinner one night this week, and I want to surprise him and make it for him!
Only problem - I've never cooked a steak IN MY LIFE!! I don't know the first thing. Do I have to cut fat off of it like chicken or does it just cook away (he doesn't ever cut anything off of it but idk!) ... Can I put it in the oven and bake it? is it tastier if I cook it in a pan on top of the stove? how long on each side? etc...
I do have a few marinades that I can throw it in - my husband usually puts it in a container with the marinade and leaves it in the fridge for a few hours - I can do that in the AM once he leaves for work.

Make sure the steaks are thick (2 fingers, at least). Season them with salt on both sides. In a very hot pan, cook each side for 4 min. Use spam so they don't stick. After that, in a pre heated oven, bake the steaks with a big block of butter on top of them. 20 to 30 minutes (more if you like them very well done). And don't worry about the fat... You are not doing this every day, right?
Also, don't worry about the seasoning, marinades, etc. You will use only salt. Enjoy.
Preheat your oven to 350
let your meat get to room temp
salt and pepper both sides liberally
heat an oven safe skillet with some oil... until the oil just begins to smoke
sear both sides of the meat for three minutes... make sure NOT to touch the meat until the three minutes is up
Place skillet in the oven and let steaks cook another 10 minutes
DONE
Ok, basics. Trim off all fat as the frying-pan's heating. Get it so as the oil has a slight shimmer [you'll know what I mean when you see it]. Fry on one side and make sure it doesn't burn. [just watch it] Then turn over and do the same again on the other side.
Cook onions [about 3 medium ones] and mushrooms [half pound] and put a little salt on and serve.
He'll love that.

* 1 1/2 pounds sirloin steak, 1 to 1 1/4-inches thick
* 2 teaspoons olive oil
* Salt and freshly ground black pepper
Directions
Preheat oven on broiler setting. Make foil 'snake' out of aluminum foil to use to keep oven door slightly ajar so that broiler won't turn off if it gets too hot. Brush steak with oil and salt and pepper, to taste. Place a piece of foil on the bottom rack as a drip pan. Place another rack in the position above this and put the steak directly on this rack. Cook steak in this position for 5 minutes. Flip steak and cook for another 5 minutes. Move rack with steak to top position in oven, moving rack with foil and drippings just underneath, and cook for 3 minutes. Flip 1 last time and cook for another 3 minutes. Transfer steak to wire rack and rest for 3 to 5 minutes. The above times are for medium doneness. Adjust cooking times up or down as desired.
