some VERY simple applesauce recipes?!
Answers:
If you desire no sweetness added, you need to start with sweet apples (NOT like Granny Smiths). Macintosh apples are the best all-round apples for just about anything you need apples for!
If you are trying to stay away from "processed" sugars, maybe you can try adding some honey to sweeten the applesauce instead.
But if you are desiring "unsweetened" applesauce, here is a good recipe to follow (Thanks to food.com... see link below):
Applesauce
Servings: 6
6 -8 medium apples, peeled and quartered
1/2 cup water
1 teaspoon cinnamon
In large saucepan, combine apples and water. Bring to a boil and cover. Simmer over low heat for 15 to 20 minutes or until tender, stirring occasionally. Stir in cinnamon and cook until thoroughly heated.

Applesauce Pancakes
* 2 cups dry pancake mix
* 1 teaspoon ground cinnamon
* 2 eggs
* 1 cup applesauce
* 1 teaspoon lemon juice
* 1/2 cup milk
Directions
1. In a large bowl, stir together pancake mix and cinnamon. Make a well in the center of the pancake mix. Add the eggs, applesauce, lemon juice and milk; stir until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Peel apples.
Core them, cut into slices.
In a small pan put half a cup of water and the juice of two lemons.
HEat it.
Add the apple slices.
Stir with wooden spoon on medium heat.
After a few minutes they're going to get soft, keep stirring every so often.
Add half a teaspoon of cinnamon. Carry on cooking. Add a few drops more water or lemon juice if the pan gets dry.
After ten-fifteen minutes they should be soft enough to mash with a spoon.
That's it.
Also works with pears....and ginger in the pears.
Core, peel and slice apples. Put in misrowave till softened and mash. Then add the cinnamon.
Just cook the apples 10 or 15 minutes with a little water so they don't stick in the pan, mix them and add cinnamon when the apple sauce is done
