What can I make with 3 chicken breasts?!


Question: What can I make with 3 chicken breasts?
I have 3 leftover (uncooked) boneless skinless chicken breasts from making chicken parmesan last night. Don't know what to do with them. Ideas?

Answers:

Chicken Spaghetti is always good in a white cream sauce. You could always use an Alfredo sauce.

Basic idea to so grill the chicken on a skillet,
Make the white sauce...can also usually be bought
Make spaghetti
Serve.

You dont necessary have to put the chicken in the sauce, but i believe you could,



Baked Chimichangas

Ingredients

3 chicken breasts cut into small cubes (can be cut up once chicken is cooked through, it's just cooks faster if you cut the breasts up prior prior to cooking them - I use kitchen shears)
1 cup salsa
1 small onion, chopped
3/4 teaspoon ground cumin
1/2 teaspoon dried oregano
6 flour tortillas (10 inches), warmed
3/4 cup shredded reduced-fat cheddar cheese
1 cup reduced-sodium chicken broth
2 teaspoon chicken bouillon granules
1/8 teaspoon pepper
1/4 cup all-purpose flour
1 cup fat-free half-and-half
1 can (4 ounces) chopped green chilies

Directions

In a nonstick skillet, combine the chicken, salsa, onion, cumin and oregano until chicken is cooked through and most of the liquid has evaporated.

Place 1/2 cup chicken mixture down the center of each tortilla; top with 2 tablespoons cheese. Fold sides and ends over filling and roll up.

Place seam side down in a 13-in. x 9-in. baking dish coated with cooking spray. Bake, uncovered, at 425° for 15 minutes or until lightly browned.

Meanwhile, in a small saucepan, combine the broth, bouillon and pepper. Cook until bouillon is dissolved. In a small bowl, combine flour and cream until smooth; gradually stir into broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in chilies; cook until heated through. To serve, cut chimichangas in half; top with sauce. Yield: 6 servings.



just chop or slice and add to the sauce so it gets heated

Fettuccine Alfredo
Ingredients
8 ounces dried fettuccine
2 tablespoons butter
1 cup whipping cream or milk
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
Grated or finely shredded Parmesan cheese (optional)
Directions
1. Cook fettuccine according to package directions.
2. Meanwhile, in a large saucepan melt butter. Add cream, salt, and pepper. Bring to boiling. Reduce heat and boil gently for 3 to 5 minutes or until mixture begins to thicken. Remove from heat and stir in 1/2 cup grated Parmesan cheese. Drain pasta. Add pasta to hot sauce. Toss to combine. Transfer to warm serving dish. Serve immediately. If desired, sprinkle with additional Parmesan cheese, Makes 4
