Ingredients:
1/2 cup extra virgin olive oil
1 tablespoon red wine vinegar
3 - 4 tablespoons lemon juice
1 clove of garlic
2 - 3 spoonfuls of green Bell peppers,
1 piece of whole feta cheese (approx: 4 ounces)
1/2 teaspoon salt
1/2 teaspoon oregano
Black pepper, to taste
Procedure:
Mix all ingredients into a processor and puree.
Suggestions to Serve:
Typically you would place this mixture over a traditional Greek Salad and add some more feta cheese as a topping. This can be serve with warm pita bread. However, you can use this dressing on any of your favorite salad ingredients and be inspired and create your own signature salad.
Traditional Greek Salad:
Ingredients:
3 cucumbers, coarsely chopped
6 firm plum tomatoes cut in slices
1 red onion, sliced into rings
1/2 green pepper chopped in strips
1/4 pound of Greek olives
1/2 lb. marinated feta, chopped in small cubes
1 tsp dried Greek oregano
1 tsp salt
several marinated anchovies to top the salad off
Optional:
Add an authentic Greek food favorite to throw in the finished salad; dolmades (aka stuffed grape leaves). Dolmades can be found in a can and purchased at any gourmet food shop. The grape leaves blanket cooked rice in basil and are packed in a heavy olive oil.
Procedure:
Combine all ingredients (except dolmades, feta, and anchovies) in a salad bowl. Garnish the Greek salad with a little freshly ground black pepper and arrange the remaining ingredients.
Now add that delicious dressing you just made and serve 6 in your party.

Mix together very well and toss with torn romaine lettuce, slices of purple onion, and crumbled feta cheese. Add olives (optional). Its very delicious and much lower in fat than restaurant salads.
