Arrowtooth flounder recipes or ideas?!


Question: Arrowtooth flounder recipes or ideas?
I love this fish, buy it frozen, and usually broil it while still frozen with some lemon, lemon pepper, olive oil, and garlic, or with blackening powder. I eat it on a bed of pasta or plop it on top of a green salad. Arrowtooth flounder is not endangered but plentiful. The fillets are HUGE; I pay 10 bucks for 4 pounds; it has negligable mercury; and the taste is mild.

But as anybody who has eaten it knows, it is a very mushy fish, and is often used commercially in making fish powder. I thawed it before cooking only once and it was almost liquid and unmanageable. It only holds together if I broil it frozen and let it thaw (and presumably toughen) while under the broiler. It tastes delicious.

But I'm wondering if someone else has found a way to cook this really mild but tasty and safe and economical fish. IT is so soft, and that makes it difficult to work with.

I've never heard of it, but it sounds great! I detest mushy fish.

I suspect it has been allowed to be thawed and refrozen.

I haven't used the Arrowtooth but have enough experience with other types of similar flat fish but have found they are best to roll up help together with a toothpick if you wish and poach.
Place in a pan of water and bring to the boil.
Carefully turn, and remove the pan from the heat an cover.
The fish will finish cooking in the hot water.
