You can freeze anything, the issue is the quality of the frozen item once it has been defrosted. I would freeze the cooked chicken and vegetables, defrost them, heat them, and add them to freshly made cous cous.
If you are happy with the quality of the frozen cous cous, by all means, keep at it. I would freeze it without any of the add-ins.

Yes, it can be frozen very successfully. You might consider using those ziplock sandwich bags for this. Then you can just toss the bag in pot of boiling water and time it at 5 minutes after it comes back to boil.
I do not defrost frozen foods before heating them to serving temperatures. I just toss them into the pot of boiling water to heat. My hubby likes this as he can order what he wants to eat, and I can stay more on my medically suggested food plan without tromping on each other's preferences.
You can freeze cous cous. I would do the cous cous alone. Never freeze anything, thaw it and then refreeze it--especially important if you are cooking for a baby.
