Question: What should I make for dinner tonight?
I'm about to go to the grocery store, but I don't really know what I'm going to get. Any ideas? :)

This is a new favorite and what I will be making tonight

Crispy beef

Ingredients
2 cups spiral pasta
1 pound ground beef
3/4 cup diced onion
1 garlic clove, minced
1 14 1/2 ounce can diced tomatoes (I like the fire-roasted kind)
1 10 3/4 ounce can condensed cream of mushroom soup
3/4 cup shredded cheddar cheese, sharp as you like
3/4 teaspoon kosher salt
1/3 cup sour cream
1 2.8 ounce can french-fried onions

Method
Heat oven to 350

Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook the beef, onion and garlic over medium heat until meat is no longer pink and the onion is translucent.

Drain pasta; add to the beef mixture with the tomatoes, soup, cheese, sour cream and salt.

Transfer to a greased 2 quart baking dish and top the surface with the onion rings.

Bake 30 to 40 minutes until hot and bubbly and the top is deep golden brown.

Please don't be afraid of the garlic. It's fun to serve and each diner peels his or her own garlic. Serve this in a soup bowl with hot, crusty Frenchbread for dipping into the delicious sauce.

Ingredients:

? 2 tbsp olive oil

? 6 large skinless and boneless chicken breast halves

? 3 large heads garlic (about 40 cloves), unpeeled and broken apart

? 2 tbsp fresh thyme leaves, or 1 tbsp dried

? 2 cups dry white wine

? 1 cup chicken broth

? Salt and pepper to taste


Directions:

1. Preheat the oven to 450°F.

2. Over medium-high heat, warm the olive oil in an ovenproof casserole, and saute the chicken on both sides until golden, about 5 minutes total.

3. Turn off the heat.

4. Remove the chicken.

5. Spread the garlic cloves over the bottom of the casserole, sprinkle with thyme, and arrange chicken on top.

6. Pour in the wine and the broth, and season with salt and pepper.

7. Bake for 30 minutes.

8. Place the chicken into 6 soup plates.

9. Mash the garlic cloves in the broth and ladle over the chicken.

10. Serve hot with chunks of a baguette or Italian bread for dipping.

With snow on the ground, I've been making steak and gravy with mashed potatoes, pork chops diane over egg noodles, and spaghetti with sausage and mushroom sauce. I've really been craving a roasted chicken, though; my other half hates my chicken because I won't cook it into shoe leather like his mom did, so I have to wait until he's gone this weekend to treat myself. Or maybe lasagna, oh, or baked mac and cheese? Nice and warming, by heating the house with the oven, AND warming the tummy.



Well I'm making my famous meatloaf. It's super easy and inexpensive and my kiddos love it. You'll need:
2 lb. lean ground beef
1 pkg. Stuffing Mix for Chicken
1 cup water 2 eggs, beaten
2 tsp. chili powder
1/2 cup Thick 'N Chunky Salsa, divided
3/4 cup Mexican Style Finely Shredded Cheese

So you heat oven to 375°F. Mix all ingredients except 1/4 cup salsa and cheese. Shape into oval loaf in 13x9-inch baking dish; top with remaining salsa. Bake 1 hour or until done (160oF). Top with cheese; bake 5 min. or until melted.

Told ya super easy, right? I always make mashed potatoes and green beans to go with it. YUMMO!
