2.I am working 10 hours tomorrow morning til evening..
so, a recipe that is EASY, GOOD, and not consisting of MEAT! :D thanksss!

Here are 2 pasta dishes that are quick and easy to prepare... I would serve these with a dsalad.
Zuchinni Lasagna
Ingredients
Serves 4
Olive oil, for baking dish
8 ounces cream cheese, room temperature
1 container (15 ounces) ricotta cheese
Coarse salt and ground pepper
2 medium zucchini, (8 ounces each) halved lengthwise, then sliced thinly crosswise
1 garlic clove, minced
2 teaspoons dried oregano
6 no-boil lasagna noodles
2 ounces shredded (1/2 cup) mozzarella cheese
Directions
1.Preheat oven to 425 degrees. Lightly oil an 8-inch square baking dish; set aside.
2.In a medium bowl, stir together cream cheese and ricotta; season with salt and pepper. In another medium bowl, combine zucchini, garlic, and oregano; season with salt and pepper, and toss to combine.
3.Spread 1/3 zucchini mixture in prepared baking dish; top with two lasagna noodles, then 1/3 ricotta mixture. Repeat twice with remaining zucchini mixture, noodles, and ricotta mixture, finishing with the ricotta mixture. Sprinkle with mozzarella.
4.Cover baking dish with aluminum foil; bake until bubbly and noodles are tender, 30 to 35 minutes. Remove foil; bake until golden brown, 15 to 20 minutes more. Let stand 10 minutes before serving.

Fettucinie with Caramelized Onions
Ingredients
Serves 4
1 tablespoon olive oil
2 medium onions, halved and thinly sliced
1/2 teaspoon dried thyme
Coarse salt and ground pepper
1 package of 8 ounces fettuccine
2 tablespoons butter
2 ounces Parmesan, shaved with a vegetable peeler
Directions
1.In a large skillet, heat oil over medium. Add onions and thyme; season with salt and pepper. Cover, and cook, without stirring, until onions have released their liquid, about 5 minutes. Uncover, and cook, stirring occasionally, until deep golden brown, 25 to 30 minutes more. When bottom of skillet darkens, add a few tablespoons water, and scrape up browned bits with a wooden spoon (you may need to do this 2 or 3 times).
2.Meanwhile, bring a large pot of salted water to a boil. When onions have about 10 minutes left to cook, add pasta to water in pot, and cook until al dente. Reserve 1/2 cup pasta water; drain pasta, and return to pot.
3.Add onions and butter to pasta in pot; season with salt and pepper, and toss to combine. Gradually add enough pasta water to create a thin sauce that coats pasta. Serve pasta topped with Parmesan.

Fettuccine Alfredo
Ingredients
8 ounces dried fettuccine
2 tablespoons butter
1 cup whipping cream or milk
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
Grated or finely shredded Parmesan cheese (optional)
Directions
1. Cook fettuccine according to package directions.
2. Meanwhile, in a large saucepan melt butter. Add cream, salt, and pepper. Bring to boiling. Reduce heat and boil gently for 3 to 5 minutes or until mixture begins to thicken. Remove from heat and stir in 1/2 cup grated Parmesan cheese. Drain pasta. Add pasta to hot sauce. Toss to combine. Transfer to warm serving dish. Serve immediately. If desired, sprinkle with additional Parmesan cheese, Makes 4
1. Catholics have been allowed to eat meat on Friday (outside of Lent, which hasn't started yet) for years, but, OK...
2. Keep it simple: Pasta; soup; vegetarian lasagna/stew/chili; tuna casserole or tuna melts. I wouldn't try to whip up some involved 4 course meal after working 10 hours. Get some really good fresh bread from a bakery and something good to spread on it. That can save any meal.
just make veggie noodles... don't forget the oyster sauce and the soy sauce... and you should really find out if your company has any allergies before starting to stir fry the veggies... if they're not, sesame oil adds great flavor...
