You can also add eggs to lots of dishes - such as baked goods, fried rice, stir frys, minced patties and you can use it when coating meats in a batter or crumbs.

Easiest pancake recipe I know is:

1 x cup of self raising flour
1 x cup of milk
1 x egg

Stir until just combined! I like to make them sweet with toppings rather than incorporate it into the mix.
