Fettuccine Alfredo
Ingredients
8 ounces dried fettuccine
2 tablespoons butter
1 cup whipping cream or milk
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan cheese
Grated or finely shredded Parmesan cheese (optional)
Directions
1. Cook fettuccine according to package directions.
2. Meanwhile, in a large saucepan melt butter. Add cream, salt, and pepper. Bring to boiling. Reduce heat and boil gently for 3 to 5 minutes or until mixture begins to thicken. Remove from heat and stir in 1/2 cup grated Parmesan cheese. Drain pasta. Add pasta to hot sauce. Toss to combine. Transfer to warm serving dish. Serve immediately. If desired, sprinkle with additional Parmesan cheese, Makes 4
Pan seared Salmon
Pat dry salmon fillet, salt and pepper.
Beat 1 egg white with pat of butter melted, dip fish in egg wash then into seasoned breadcrumbs, press onto fish. Heat pan with some olive oil. Fry fish.
When done, remove fish to platter.
I like to add another pat of butter to pan, some crushed garlic, minced parsley , sliced scallion, a splash of white wine or squeeze of fresh lemon to hot pan to make a sauce.
-Serve with a simple wild rice blend and steamed veg like green beans.
Cottage pie Stuffed Potatoes-
Heat oven 375 degrees. Roast your baking potatoes on baking sheet and for about 45 minutes, until tender. When cool enough to handle, cut potatoes in half lengthwise and using a spoon, remove the potato flesh to a bowl, leaving 1/2-inch thick rim around the edges. Drizzle 1 tablespoon of olive oil on the baking sheet and put potato shells on it, cut side down; bake until the cut side is golden brown and skin is crispy, about 20 minutes.
Meanwhile mash potatoes with butter and milk maybe some sour cream, garlic, and scallions. On top of stove brown some ground beef, drain grease and add a choopped onion, cook til done, add a pkg of brown gravy mix and water, stir to combine all. Turn off heat, stir in equal amt of froz peas and carrots. Then fill your potatoes with meat and veg mixture top with mashed potatoes ,add a slice of butter to top , return to oven to brown tops.
3 very lg potatoes=6 servings=2 1/2 c. cooked meat/onion mixture=2 c veggies

Mountain Man Breakfast
- brown breakfast meat (your choice of one or more; if your heart can take it use bacon and sausage)
- saute in diced onions
- saute in diced peppers (optional)
- toss in thawed package of shredded potatoes (hash browns)
- Mix in shredded cheese, eggs, and milk
- Salt & pepper to taste
- Bake until golden brown
