C.C. is absolutely right; NEVER boil ribs. That's what you do if you are making beef stock, because it takes all of the flavor out of the meat and puts it into the water; then you throw away the meat and keep the stock.

Simplest recipe for ribs: sprinkle with salt, wrap tightly in aluminum foil and put on a baking sheet (just in case the foil leaks) and into a 250-degree oven for 2-1/2 to 3-1/2 hours. Take them out, unwrap them and coat them with your favorite BBQ sauce (or leave them plain, I do) and back into the oven (or on a grill) for 5 to 10 minutes.



Simple Country Ribs



* 2 1/2 pounds pork spareribs
* 2 (18 ounce) bottles barbeque sauce
* 1 onion, quartered
* 1 teaspoon salt
* 1/2 teaspoon ground black pepper
Directions
1. Place spareribs in a large stock pot with barbeque sauce, onion, salt, and
pepper. Pour in enough water to cover. Bring to a low boil, and cook
approximately 40 minutes.

2. Preheat grill for high heat.
3. Lightly oil grate. Remove spareribs from the stock pot, and place on the
prepared grill. Use the barbeque sauce in the saucepan to baste ribs while
cooking. Grill ribs, basting and turning frequently, for 20 minutes, or until
nicely browned.



OMG. NEVER boil meat. All of the flavor is thrown out with the water.
Use St. Louis cut ribs if you can find them. Otherwise, just pork ribs.
The night before you should choose your favorite rub . . . a combination of spices . . . and apply it to the ribs. Then wrap them in Saran Wrap and refrigerate overnight. Here is an example
1 T. garlic powder
1 T. onion powder
1 T. salt
cayenne pepper - from half a teaspoon to a tablespoon
1 T. black pepper
1 T. white pepper.
1 C. brown sugar
1/2 C. paprika
Simply mix all the ingredients together.

The day you are to cook, take the ribs out about 1 hour prior to cooking.
Preheat your oven to 250oF, and it will take about 4 hours to do.
Place a cake pan of hot water on the lowest rack. You may need to add water to this near the end.
Place the ribs in the oven bone side down . . . you will not turn these over (this allows the fat to 'travel' through the meat and leave all that flavor behind)!! Place them on a wire rack directly above the water pan and going in the same direction…you want to catch any drippings in this water pan.
After 1 1/2 hours of cooking ( not before ! ), spritz or mop the ribs with a mixture of 3 parts apple juice and 1 part oil. Do this every 1/2 - 3/4 hour until done.
To test for doneness, you can look at the bones and watch for the meat to pull back from the ends or you can use the toothpick test . . . insert a toothpick between the bones and if it goes through easily they are done.
Finally . . .apply any honey barbeque sauce 20 minutes prior to eating . . . this will avoid the sugars burning and turning black . . . and believe me, there is loads of sugar in every BBQ sauce!
That's it! You're done! Like I said, this whole process will take around 4 hours.

Ingredients

2 1/2 pounds country style pork ribs
1 tablespoon garlic powder
1 teaspoon ground black pepper
2 tablespoons salt
1 cup barbeque sauce
Method:
1. Place ribs in a large pot with enough water to cover. Season with garlic powder, black pepper and salt. Bring water to a boil, and cook ribs until tender.
2. Preheat oven to 325 degrees F (165 degrees C).
3. Remove ribs from pot, and place them in a 9x13 inch baking dish. Pour barbeque sauce over ribs. Cover dish with aluminum foil, and bake in the preheated oven for 1 to 1 1/2 hours, or until internal temperature of pork has reached 160 degrees F (70 degrees C).



Sprinkle ribs with salt, black pepper and brown sugar.

Heat the oven to 400°. Put the ribs on a foil covered rack, add a cup of water to the pan and stick them in the oven.

When the ribs start to brown turn the heat down to 225° and let them cook for three hours basting every 20 minutes or so. If you want more browning turn the heat back up to 400° for a few minutes at the end.

That's about as simple as it gets and they will be good.

Marinade in beer (acidity breaks down meat and keeps tender). Mix BBQ sauce with some beer.
Boil ribs. When near to done wrap in tinfoil individually if country style if not baste and bake with the BBQ sauce and beer. Near to done baking add more BBQ sauce. Or put on grill.
