How do I cook steel cut oats?!


Question: How do I cook steel cut oats?
I've tried cooking it based on recipe sites online, but every time I cook it, the oats still seem uncooked. Any tips on making a good bowl of steel cut oats?

Perfect steel-cut oats

Ingredients
3 cups boiling water or 2 cups boiling water and 1 cup Half & Half or milk
1 cup steel-cut oats
Pinch of salt
1 to 2 tablespoons butter, optional

Method
Heat oven to 300 degrees

Add the water (or milk and water), oats, salt and butter (if using) to a baking dish. Put the dish on the center rack and bake for 45 minutes, stirring 30 minutes into the process.

Remove from the oven and divide among serving bowls and dress as desired.

Any leftovers will keep up to 1 week in the refrigerator in an air-tight container.



I love steel cut oats. I like both the flavor and the texture and I eat them at least 3 times a week.
To make just one serving of oatmeal:
the night before I put 1/4 cup of oatmeal in a saucepan with 1 cup of water and a dash of salt. Cover and let set over night. In the morning, remove the cover and bring water to a boil. Turn down to simmer and simmer for 30 minutes. I stir mine constantly during the last 5 minutes so they don't stick. Remove from heat and allow to stand 1 minute before serving. (that is when you make your toast).
The texture is going to be different than rolled oats but that is what I really like about them..they are more chewy but do not have that gluey taste which rolled oats have.



I buy mine in bulk to and do them in my smaller crockpot, overnight on low, just measure 1 cup, add 3 cups of water, a pinch of salt and sugar, set it on low stir it a few times before you retire, if you have a newer one with a low down setting have it cook for 4 hours and hold it on warm.



YOu have to cook them really long. They're not like rolled or instant oats at all.
You can leave them overnight in water or milk even, and still cook them, and they'd be fine.

Simmer them half an hour.
They are worth it...
