If you don't have cake flour, you can make some by mixing 1/4 cup cornstarch and 1 3/4 cup all purpose flour. The cake itself can be a bit tougher than cake baked in an oven but it's a decent and quick recipe. I like to sprinkle a bit of powdered sugar on it after pulling it on a plate.

Snack poor and desperate, with a house full of hungry kids from the hood, I made use of that last, lonely roll of store bought pie crust sitting in the frig. You know the one I'm talkin'bout.
Super Simple Pie Crust Cookies
I was reminded of this sweet treat weeks ago while cruising through the Dine and Dish food blog. She had a post that mentioned pie crust cookies made from scratch. It reminded me of the times Memaw would sweeten her leftover pie crusts scraps with cinnamon and sugar, then toss them in the oven for browning. We loved those baked scraps just as much as her pies.

Anyhoo. I hoped I could tame the savage beasts, ur, I mean the sweet clone troopers running through my house. And these worked out GREAT! The honey drizzled on top was the clincher. Later on after they had time to set out a while, I enjoyed them without the honey but with a cup of tea.HERE'S ALL I DID

* one roll of store bought pie crust
* 1 1/2 tablespoons melted unsalted butter
* 2 teaspoons local honey
* ground cinnamon
* sugar

Heat oven to 400oF degrees.

Roll out pie crust dough on surface lightly coated with flour, roll out enough just to smooth it out.

In a small bowl, combine the butter and honey and warm in the microwave until the butter is melted. Stir well. Brush all over the pie crust dough. Sprinkle with cinnamon and sugar.

Use a biscuit cutter to cut out cookies and move to a cookie sheet sprayed with non-stick spray.BAKE for 7 to 9 minutes, until light golden brown.

I used the bits of dough scraps to decorate the cookies. Some reminded me of little thongs. I thought about naming this post Thong Cookies, but I was afraid of getting the wrong sort of traffic to the blog.
