I make mine the size of a small orange, and do brown them on both side, I also only colour them and the bake in a 350 d F oven for 20-25 minutes, frying is fine but can be greasy or they can overcook, if you do fry, shallow fry with only 1/2 inch of oil or fat, a combination of veg oil and butter not only cooks them nicely but imparts a nutty flavour, fry them for 5-8 minute per side, drain on paper towel, I scoop mine with a ice cream scoop, and press them like making small hamburger patties, sauce to serve with them are your choice, tarter or remoulade is nice.
Just a little canola or peanut oil or butter, you are not deep frying them, just enough to coat the bottom of the pan so they don't stick. You might want to try to broil them instead.
All the ingredients are cooked so you are just heating them up-- golden brown is best.
