Question: I need help with dinner, I'm thinking lots of beans.?
Okay, so I have a half pound of pinto beans and a half pound of black eyed peas soaking together in a brine solution.

I have fresh chicken breasts, two cans stewed tomatoes, tomato paste, chicken stock, white and brown rice, and many various seasonings including Sazon Goya. (I have more items, but these are the main ingredients I may want to include.)

Normally when I cook beans, I use a paket sazon goya, salt and pepper, a can of stewed tomatoes and other dried herbs. I cook the beans with chicken and add more seasonings until it tastes right I can't remember exactly everything I put in the pot because each time is done a little differently and I don't bother to measure or write anything down.

I would like to add rice, but I've never cooked it in a soup before, and just get some suggestions on making this dish better.

Any help is appreciated!

Lorraine- Here's a few ideas you might want to consider:

-Definitely consider adding in some chopped onion (white or yellow), fresh garlic sea salt, freshly cracked pepper, cumin and 1 bay leaf to the recipe.

-Cook the rice separately. Then, add it to each bowl of soup. Don't combine the rice & the entire pot of soup. You can leave it plain or make a slightly enhanced rice:
*Option 1: Garlic rice-Add minced garlic to the rice while it cooks
*Option 2: Brown the raw rice + finely minced onion + minced garlic in olive oil in a large skillet until everything turns slightly brown. Then, add in chicken broth to cook it slowly as you normally would.

Add more water if you are going to add rice. Cook the rice in the last 20 minutes of cooking time. Rice tends to get soggy. You might want to make the rice separately and pour the rest over it.
