Last summer my pappaw picked turnips and my mom washed them and put them in the fridge and didnt cook them til the next day or so and they were fine.
If you keep them submerged in water, and refrigerate the dish covered, you'll be fine.
I'd prepare them and put them in a clean plastic bag in the fridge. We can buy prepared veg in the supermarket so doing your own over night is fine.
