Im makeing country style bbq ribs and would love a nice homeade potatoe salad recipie with it

This is a good homemade one: (and remember, as with any recipe..you can tweak it to your own liking)

Homemade Potato Salad--can serve 12+ ppl

Ingredients

* 6 medium potatoes (I like the red)
* 1 small onion, finely chopped (or can use chopped green onions)
* 1 cup celery, chopped
* 1 tsp celery seed
* 1 teaspoon salt
* 6 hard-cooked eggs, diced

For the Dressing: (don't freak out when you're cooking it because of the smell...it will change! ;)
* 2 eggs, beaten
* 1/2 cup white sugar
* 2 teaspoon cornstarch (for the consistency)
* salt to taste
* 1/2 cup vinegar
* 1 (5 ounce) can evaporated milk
* 1 teaspoon prepared yellow mustard
* 1/4 cup butter
* 1 cup mayonnaise

Directions

1. Place the potatoes into a large pot, and fill with enough water to cover. Bring to a boil, and cook for about 20 minutes, or until easily pierced with a fork. Drain. Cool, peel and dice. Transfer to a large bowl, and toss with the onion, celery, celery seed,1 teaspoon of salt, and hard-cooked eggs.
2. While the potatoes are cooking, whisk together 2 eggs, sugar, cornstarch, and salt in a saucepan. Stir in the vinegar, milk, and mustard. Cook over medium heat, stirring frequently, until thickened, about 10 minutes. Remove from heat, and stir in the butter. Refrigerate until cool, then stir in the mayonnaise.
3. Stir the dressing into the bowl of potato salad gently until evenly coated. Chill several hours or overnight before serving for best flavor.

editing to add: You might also like to add 1/2 cup chopped dill pickle to the potato salad.



Potato Salad - Aloo bharta - Alu Raita
Ingredients for making 3 servings

Potato - 2 large.
Plain Yogurt - 1 1/2 cups
Salt - 1/2 tsp or to taste
Sugar(optional) - 1/4 tsp
Green chili(optional) - 1 , chopped fine
Coriander leaves(cilantro) - 1 tbsp chopped.
Ingredients for Seasoning

Vegetable oil - 1 tsp
Cumin seeds - 1/2 tsp
Asafetida(optional)- a pinch
Curry leaves(optional) - 4-5 leaves.
Preparation

Boil potatoes in water till they are done well or pressure cook the potatoes. Let cool and then remove skin.
Mash the potatoes lightly or you can cube them in bite size pieces if you prefer.
Beat the yogurt till it is smooth.
Add the potatoes, salt, sugar, chili and coriander leaves to the curd. Mix well.
Make seasoning:

Heat oil. Add cumin seeds. When they stop spluttering, add asafetida and curry leaves if you are using them.
Take off fire and let cool a little.
Add to the salad and mix well.
You can serve this salad at the room temperature or chilled.

CREAMY POTATO SALAD RECIPE
Ingredients:
? 6 Round red potatoes
? 2 tbsp Prepared mustard
? 1 tbsp White wine vinegar
? 1/4 Cup low-fat sour cream
? 1/4 Cup chopped green onions
? 2 Ounces diced pimiento, drained
? 1/2 tsp Salt
? 1/2 Cup nonfat mayonnaise
? 1/8 tsp Garlic powder
How to make Creamy Potato Salad:
? Place cut red potatoes in a water filled saucepan and bring it to boil for 15 to 20 minutes until tender.
? Drain and cool it for a while.
? Mix potato, pimiento and chopped green onions in a large bowl; toss gently.
? Combine mayonnaise and stir well. Then add to potato mixture.
? Cover and chill. Serve.

3 lbs of red potatoes skin on
1/2 large yellow onion diced
1 cup mayonnaise
1 tbsp white vinegar
1 tsp sugar
1 tbsp (or 2) of good Dijon mustard
1 tsp Worcestershire sauce
1/4 tsp Tabasco sauce
salt and pepper to taste

Boil potatoes in salted water until fork tender. Let cool a bit and then cut into quarters or smaller.
Mix white wine vinegar with sugar and salt in bowl to dissolve. Add rest of ingredients, potatoes last.
Best served when still warm.

A, we do something very close to the one LadyDi has posted there, so need repeating. I have found using the green onions better than using normal onions. As for the mayo, use small amounts and fold it through, that way it's not drowning in mayo.



You need:

- (Depending on the amount of people) potatoes
- Mayonaise
- salt
- some chopped parsley
- A LITTLE BIT OF BUTTER

(BOIL THE POTATOES AND CHILL BEFORE SERVING.)
