Question: Will this work? Can I make cornflake crusted chicken this way?!?
Here's the recipe for chicken encrusted with cornflake:
4 bone-in skinless chicken thighs
Coarse salt and ground pepper
1 large egg
2 cups crushed cornflakes
1 tablespoon olive oil

1. Preheat oven to 400°. Rinse chicken, and pat dry. Season generously with salt and pepper.

2. In a small bowl, whisk egg with 1 tablespoon water. In a large bowl, mix cornflakes with oil, cayenne, and 1 teaspoon salt.

3. Working with one piece of chicken at a time, dip chicken in egg mixture, then coat with seasoned cornflakes, pressing flakes to help them adhere. Transfer coated pieces to a rimmed baking sheet. Bake until golden brown and crisp, about 30 minutes. Sprinkle with salt and pepper before serving.

That's like 360 calories and I want to make it a little lower. If I take the breast and smother it in honey mustard sauce and dip it in the cereal and then bake it, will it be fine?

Jericho, if that's what the recipe calls then your good to go. I do not see a problem with that.

In fact there is a recipe I make, that has the chicken marinating in Italian Salad Dressing and Brandy for a minimum of eight hours, then you toss them in cornflake crummies and bake, same lines.



Hi, I would first dip the chicken in seasoned flour then in egg and followed by your cornflake mix. The reason for using flour is so that the egg will adhere to the chicken and help crisp the skin. I hope this helps,all the best. rab

yes I don't think the oil helped much in that case, it would just make it clump. The dipping way you suggest would make it stick better and add flavor.



Use Coco Pops instead.



Yes it is ok, that is a little variation from the
old recipe called oven fried chicken.
We make a similar kind often.
