Does anyone know a recipe for coffee cake muffins with out the extras like walnuts or sour cream? :)?!

The walnuts you can leave out - they don't affect the chemistry of the recipe. You might want to add some vanilla or other extract to adjust the taste, but that's about it. The sour cream is another matter. You'll likely need to replace it in the recipe to avoid having a dry, almost tasteless muffin. The fat in the sour cream adds body and draws out the other flavors. You can add some butter to make up for the fat, but don't add equal quantities. If you want to reduce the fat, add some applesauce in place of the sour cream. It will be a bit sweeter, so take out a small amount of the sugar to adjust.
Be brave. I've found that most recipes are difficult to mess up, if you just pay attention to simple principles.
you can just leave out the walnuts and you might be able to substitute yogurt with baking soda for sour cream
