Check out the joyofcooking.com for tons of recipes and great directions...there are recipes for every level.
Easy recipes are the basic homecooking ones. Roast beef baked with the veggies is a great one pot dinner. Casseroles are a good way to start too. Campbell soup has a website that has lots of easy recipes with few ingredients needed.
Chili is a good starter as are soups. Soup can be tossed together without any special recipe and will use up your leftover veggies from the fridge and can be frozen after cooling for dinner those nights you do not feel like cooking. The internet is great for searching for simple recipes, but be sure to read the reviews so you are aware of some changes that might be needed. Have fun with your cooking.

Do you like Macaroni and cheese? If so you should make mac and cheese pizza! :) I made this for my boyfriend and he absolutely loved it! Sounds crazy but it's easy and delicious.
You need:

Pizza crust (wal-mart sells pre-made pizza crust that you can use)
White cheese sauce (like the kind they sell for chips)
Family size Velveeta and shells macaroni and cheese

Cook the velveeta and shells like you would normally. Once it is ready, place the white cheese sauce in the microwave until it is warm and creamy. Take the pizza crust out of its wrapping and spread the white cheese sauce on the crust like you would with marinara sauce. After the crust is covered, spread the macaroni and cheese on top of the sauce covered crust until you create a nice even layer. Bake at 450 degrees for about 12-15 minutes (if you like your pizza more gold, bake for about 15 mins but keep an eye on it).

Viola!! Mac and cheese pizza! :D Yummm
