Bake it! Takes a little longer but less shrinkage and you can make more at a time.
Ingredients:
# 12 boneless skinless chicken breast halves
# 2 (8 ounce) cartons chive & onion cream cheese
# 2 tablespoons butter
# salt
# 12 slices bacon
Directions:
1. Flatten chicken to 1/2" thickness.
2. Spread 3 tablespoons cream cheese over each chicken piece.
3. Dot with butter and sprinkle with salt; roll up.
4. Wrap each with a bacon strip.
5. Place, seam side down, in a greased pan.
6. Bake, uncovered, at 400F for 35-40 minutes or until juices run clear.
7. Broil 6 inches from the heat for 5 minutes or until bacon is crisp.
8. If you are making these ahead for future use, freeze these uncooked on a cookie sheet in your freezer. When solid, wrap and put in a ziplock bag or vacuum seal desired quantities.
9. To cook from frozen state, thaw before cooking and follow directions above.
You look at bacon and think "it's small, how long could it take to cook!?", but in reality, bacon takes longer than you think. Start with a cold pan or griddle. Lay the bacon out - try not to have any touching or they will stick together. Turn the burner to medium low. You can turn it to medium after it starts to cook and some of the fat is rendered out. Only turn it once, after about 5 minutes. It will cook less time after turning than before you turned it. Don't walk away. If you have to, then turn the burner to low. Have a plate with paper towels on it ready to take the pieces out and drain. Yum. We love bacon.
Have the patience to stand and if you are cooking, always think that you are preparing or serving a gift to a person that you value. Turn the heat to the highest. Don't put oil since the bacon's fat will extract oil. Put the strips of bacon in a pan. Then wait for 3 minutes while frying the bacon. Flip the bacon so that you can see if the bacon is turning red, if not put it upside down again. Just keep on flipping until you see both sides crispy and tender.
The best bacon I've made was on a griddle. A griddle is that rectangle cooking flat top you plug in. Sometimes you will have a flat top on your stove. Or use a large frying pan.
Step 1: Turn heat to 7/10 power
Step 2: add bacon strips. Don't overlap
Step 3: Turn every 3 minutes or so until the bacon is desired crispiness.
In my opinion, if the bacon breaks when you bend it, it is burnt. Slightly floppy bacon has the best flavor. Just don't leave it unattended and keep flipping it and you will be alright. Keep your heat medium
