What's the butter for? Is it to spread on the pancakes once made? - replace with jam or sugar sprinkled on.
Or is it to cook them in? -replace with cooking oil, very hot.

Yes, I often use oil instead of butter in the batter. If you are cooking them on a stick-proof griddle or a well seasoned cast iron frying pan you do not need any grease for the pan.

you can make pancakes without butter, try making batter with 5oz of plain flour 2-3 eggs and 1/2 pint of milk blend it together.

I dont use butter, i use flour, sugar, eggs, and milk, I use cooking spray in the pan so they dont stick
