Question: Does anybody have any good potato salad recipes ?
I decided to ask a fun question, and I'm interested in trying out a new potato salad . Does anybody have any ideas ?

Green Chile Potato Salad Mild and hot green chiles jazz up this tasty potato salad. This is a great potato salad to serve with grilled steaks or burgers.
Prep Time: 30 minutes
Total Time: 30 minutes
Ingredients:

* 2 1/2 pounds red-skinned or gold potatoes, peeled
* 4 large eggs, hard cooked, peeled, chopped
* 1 small onion, finely chopped, about 1/4 to 1/3 cup
* 3/4 cup chopped celery
* 2 to 3 tablespoons mild green chile peppers, chopped
* 1 to 2 tablespoons chopped jalapeno peppers
* 1/2 cup mayonnaise, or as desired
* 2 tablespoons Dijon mustard or spicy brown mustard
* 1 tablespoon dill relish
* 2 tablespoons lime juice
* 1/2 teaspoon salt, or to taste
* 1/4 teaspoon freshly ground black pepper
* 1/2 teaspoon chili powder
* 1/4 teaspoon ground cumin
* chopped fresh cilantro, optional

Preparation:
Cut potatoes up and put them in a medium saucepan. Cover with water and bring to a boil over high heat. Reduce heat to medium-low, cover, and boil gently for about 15 to 20 minutes, or until fork-tender. Drain and let cool completely. When the potatoes are completely cooled, cut into bite-size chunks.

In a large bowl, combine the potatoes, chopped eggs, celery, onion, chile peppers and jalapeno peppers.

Combine the mayonnaise with mustard, relish, lime juice, and seasonings. Add to the potato salad and mix until well blended. If desired, add more mayonnaise.

If desired, garnish with chopped cilantro before serving.Serves 4 to 6.

A mashed potato salad recipe.
Ingredients:

* 6 cups hot mashed potatoes
* 1/2 cup chopped celery
* 3/4 cup salad dressing (Miracle Whip)
* 1/2 cup minced onion
* 1/4 cup milk
* 1/4 cup vinegar
* 1 tablespoon dry mustard
* salt and pepper to taste
* paprika
* green bell pepper rings

Preparation:
combine hot mashed potatoes with celery, salad dressing, onion, milk, vinegar, and mustard. Salt and pepper to taste and garnish mashed potato salad with a sprinkling of paprika and bell pepper rings.
Mashed potato salad serves 6.

This German potato salad includes diced potatoes, bacon, hard cooked eggs, vinegar, and green onions.
Ingredients:

* 12 slices bacon
* 2 sliced hard cooked eggs
* 6 cups hot diced cooked potatoes
* 3 tablespoons granulated sugar
* 1 tablespoon cornstarch
* 1/2 teaspoon salt
* 1/3 cup vinegar
* 3/4 cup water
* 2 tablespoons sliced green onions
* chopped parsley for garnish

Preparation:
Dice 6 slices of the bacon. Fry diced bacon along with the 6 whole slices in a heavy skillet. Remove whole slices to drain on paper towels; set aside.

Combine sugar, cornstarch, salt, vinegar, and water; slowly add to diced bacon and bacon grease in the skillet, cooking and stirring constantly over medium heat until thickened. Pour over hot potatoes and eggs; add green onions and toss lightly to mix. Garnish with bacon slices and a little chopped parsley; serve hot. German potato salad serves 6.

Cut spuds small 25mm-1inch cubes and cook them till near done (watch them close or you will over cook). Take them off heat when they have a bit of resistance when you bite them, but not crunchy. drain and sit.

cut up bacon into small bits and fry till crispy, drain

cut up a spring onion or three (chives instead if you like)

mix 50/50 mayo and sour cream

Soft boil a couple of eggs and cut up into small pieces.

mix egg, bacon, onion, sour cream mayo in a bowl, you can also add a bit of dijon mustard. season to taste if you want.

Pour over still warm potatoes and serve warm is good, but cold is good too.

i didn't give quantities because i make as much as i need, half a spud per person is a fair amount, but be sure not to put too much dressing on, better to have left over dressing than a salad thats over dressed (imo)

you can play with mayo sour cream ratio depending on what you like.

made it up



Again, this is "seat of the pants cooking!'

peel and cut up 4medium potatoes, or more.
Place in a moderately large pot, add water to cover by an inch or two.
Add Salt to taste.
Add at least two eggs, in the shell. If you use more than four medium spuds, add more eggs, use your own judgment.

Bring to a boil over high heat, turn stove down to medium heat and boil for 10-15 minutes.

After ten minutes, check the potatoes for doneness. Add more time until potatoes are cooked tender but not mushy.

Remove now boiled eggs from the pot and set aside.
Drain the potatoes.
Peel the eggs, chop coarsely. return to the potatoes
To the potatoes and eggs, add
4 or 5 TBS Sweet Pickle relish, use more or less according to your own taste.
Add about one half cup mayonnaise, more or less depending on your taste
Add a good squirt, maybe a Tablespoon or so, mustard, plain old yellow mustard works fine
Stir well to mix everything and make sure all the taters get mayo coated.

Taste and add more or anything you think it needs whether salt, pickle relish, mayo or mustard.

Cover the bowl with plastic wrap and refrigerate until the rest of the meal is finished cooking. You can make it a day ahead of time if necessary.

This is the way we do it in our kitchen.
Cut up potatoes 1 inch or so and boil till al dente, do not over cook otherwise it turns to mush
drain potatoes and pour italian dressing over them, toss and put in fridge over night, or chill down faster
Once italian dressing has absorbed add mayo, little mustard, green onion, black olives, celery, hard boiled egg, salt and pepper.

Comes out sooo yummy! If you make the day before it is even better because all the flavors will have time to meld together. You must try :-)

sprinkle paprika on top



potatoes, lots of cream (or mayo or cream cheese- you pick) , fried diced bacon pieces and fresh parsley. salt and pepper. Onion, raw or fried optional.
