Yes and no.
i will have to plead guilty of a charge of "seat of the pants flying" on this one, but I make a great meatloaf.
Start with 2 pounds of ground beef, place in a large mixing bowl
In a food processor, reduce two slices of good sandwich bread, use your favorite, I prefer whole grain bread, to fine crumbs, add to the meat.
Add two slightly beaten eggs.
Add one medium Onion, finely chopped
Add 1 TBS minced Garlic
Season with:
Salt
Freshly Ground Black Pepper
Chili Powder
Cumin
Emeril's Essence, either store bought or home mixed
Cayenne pepper
Curry Powder
Garlic Powder
Plus any other seasoning that strikes your fancy at the time
(I don't measure the spices, I just put in the amount that seems right to me at the time.)
Add a couple of good squirts of your favorite Mustard and ketchup
Now the fun part! Mix everything well, by hand. I highly recommend the use of vinyl or latex gloves for this part. Knead everything together until you have a fairly smooth mixture.
Line baking pan with aluminum foil, fold up the sides and end to make a container within the baking pan.
Forum the meat into a flattened loaf and place in the center of the foil container. If you wish, divide the meat in half and form two smaller loaves.
Spread good quality ketchup, I generally use Heinz, over the entire surface of the loaf or loaves.
Place the baking pan into an oven preheated to 350* F, and bake until internal temperature reaches 165*F., about one hour to one hour and a half.
If you've done a good job of forming the loaves this results in the near perfect "Sandwich Meatloaf."

Ingredients
1 egg, lightly beaten
2/3 cup milk
3 slices bread, crumbled
1 cup (4 ounces) shredded cheddar cheese
1 medium onion, chopped
1/2 cup finely shredded carrot
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds ground beef
1/4 cup packed brown sugar
1/4 cup ketchup
1 tablespoon prepared mustard
Directions
In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into a loaf. Place in a greased 9-in. x 5-in. loaf pan.
In a small bowl, combine the brown sugar, ketchup and mustard; spread over loaf. Bake at 350° for 60-75 minutes or until no pink remains and a meat thermometer reads 160°. Drain. Let stand for 10 minutes before slicing. Yield: 6 servings.
I even added sliced mushrooms and it turned out great. Plus its quick and easy.

Instructions In a small bowl soak bread in water to cover 5 minutes. Squeeze out excess water. In a large bowl combine bread, garlic, onion, celery, salt, pepper, egg and milk. Stir until well blended. Crumble ground beef into bread mixture and stir to combine thoroughly. Shape meat mixture into a loaf and place in a shallow heat- resistant, non-metallic baking dish. Heat, uncovered, in Microwave Oven 6 1/2 minutes. Spread catsup over top of meat loaf and heat, uncovered, in Microwave Oven 5 minutes. Allow meat loaf to stand covered 3 to 5 minutes before serving. Serving Size: 4

It is a nice recipe, only add some smoked bacon strips on the top of the loaf and then bake.
Serve with mashed potatoes and raw broccoli salad - finely chop the broccoli, add some dressing like a homemade mixture of lemon juice, salt, olive oil,fresh grounded black pepper, and a garlic clove crushed.
I like this with a glass of cold white wine, like Chardonnay.
It is heaven.
My advice is to use fresh fish fillets instead of canned if you can.

Clare's meatloaf- Maui Island Cookbook
1/2 c. Grape-Nuts cereal
1 pound hamburger
1/4 c. chopped onion
1/2 c. water
1 egg, slightly beaten
1/2 tsp. salt
Italian Seasoning to taste
Mix Grape Nuts and water; let stand for 2-3 minutes. Combine rest of ingredients; mix well. In a greased pan, shape into loaf. Bake one hour at 350'. To get moist loaf, cover with aluminum foil for first 30 minutes and then remove. NOTE: This meatloaf is good and VERY moist. I let it bake for 50 minutes.

MUFFIN MEATLOAFS
1 egg
1/2 c. milk
3/4 c. oats
1 pound hamburger
3 tbsp. chopped onion (optional)
1 tsp. salt
1/2. grated cheese
Preheat oven to 350 degrees. Lightly grease cups in muffin pan.
Combine all ingredients; mix well. Spoon mixture into lightly greased muffin cups. Bake for approximately 20-25 minutes or until meat is cooked through.
Cool slightly before removing from muffin cups. May have to drain the juices before allowing to cool. I save the juices and make gravy.

2 pounds ground beef
2 eggs
1 medium onion, chopped
A couple of pinches of parsley
1/2 cup Italian bread crumbs
2 cloves garlic, chopped
Salt and pepper
8 ounces ricotta cheese
A couple of pinches of dried basil
1 (28-ounce) can of whole peeled tomatoes with basil, Italian Bread crumbs
1. Mix first 6 ingredients, salt and pepper to taste, and mold in standard-size loaf pan.
2. Scoop out the center of the loaf.
3. In a separate bowl, mix cheese and basil, salt and pepper to taste, and fill in the hole with this mixture.
4. Replace scooped-out meat to make a hat covering the cheese mixture.
5. Top with tomatoes. Bake at 350 degrees for 45 minutes.
6. Sprinkle bread crumbs over the top and bake another 15 minutes. Makes 6 to 8 servings.
Note: This meatloaf is very delicious and not your typical meatloaf. I use Winn Dixie brand whole plum tomatoes with basil. When I add the tomatoes , I crushed them. After the meatloaf is done, I drain the juices from the meatloaf and make a tomato gravy using the tomato juices, little cornstarch and water. Very Very good.
