For a start off - chef or not - you do NOT use hot water pastry for Cornish pasties - you only use THAT for pork pies!
If you really WANT to make your own puff pastry then you've already been told how to do that but most people buy the ready made stuff - but for Cornish Pasties you just use an ordinary short-crust pastry anyway !
Margarita is right for traditional English or Welsh pasties you use a hot water dough, you melt the shortening or fat in water with a bit of salt, mix it into the flour for a knead-able dough, cover for 30 minutes and then roll it out, puff pastry is to delicate and the fillings will make it soggy, I am a former chef, of British heritage, my grandmother one from Liverpool and the other from Belfast Ireland made them, I have had many on my trips to the UK
Oy - you have to make a dough with flour and butter (sugar and salt too I think) roll it out thin, butter the top, fold it into thirds, roll it out, butter the top, fold it into thirds, roll it out.... repeat 20-50 times.
Frozen puff pastry as the supermarket is great, I use it all the time.
Tony is right. As much as a person likes to cook, puff pastry is one of those things best left to the freezer section of the grocery store! I always check when I'm at the store and see if it's on sale and then I stock up on it. If you do try it yourself, good luck on your attempt!
I don't think pasties use puff pastry unless you're doing a variation. In which case, puff pastry is very hard to make unless you have the time. You're better off buying it at the grocery store. Look for it in the frozen section.
Puff pastry is fairly difficult to make. Best just go to the grocery and buy some frozen. Follow the directions and you'll have beautiful puff pastries.
