Question: I have diced turkey...what can I make for dinner?
Some peppers, spring onions, tomato and basil condensed soup, any ideas please?

make some pasta and put a bunch of vegetables in it and a heavy sauce and then the turkey! like a substitute for meatballs!



You might make this scalloped potato and turkey casserole with some of tomato & basil soup on the side.
Ingredients:
* 3 cups cooked potatoes, peeled and sliced
* 1 pound leftover turkey, cubed
* 5 tbsps butter
* 1? cups thinly sliced onions
* ? cup diced celery
* ? cup diced bell peppers
* ? cup sliced green onions
* ? cup chopped parsley
* 2 tbsps minced garlic
* 2 eggs
* 2 tbsps flour
* 1? cups half-and-half or milk
* salt and cracked black pepper to taste
* parsley for garnish
* Parmesan cheese for garnish

Method:
In a large skillet, over medium-high heat, melt 4 tablespoons butter. Add onions, celery, bell peppers, green onions, parsley and garlic. Cook 3–5 minutes or until vegetables are wilted. Add potatoes and cook approximately 10 minutes. Preheat oven to 425°F. With remaining 1 tablespoon of butter, grease a 2-quart casserole dish. Place half of sliced potatoes and all of vegetable mixture in bottom of casserole. Top with turkey and add remaining potatoes. In a large bowl, whisk together eggs, flour, half-and-half, salt and pepper. Pour egg mixture over potato layers. Place casserole dish into a larger baking pan. Pour hot water into baking pan to a depth of 1 inch of casserole dish. Bake 30–35 minutes or until browned and custard is set. Garnish with parsley and cheese.

you could make a turkey salad sandwich.

take some mayo, honey and lime juice and mix together with the spring onions and peppers and basil.

Then fold in the turkey until desired consistency, get some good bread cut on a bias about 3 inch long or so, dip in olive oil and grill them, after you take them off the grill while still warm rub a garlic clove on them

then pile on the turkey top with tomatoes and thats one good turkey sandwich :)

I am assuming that you might want to add some good veggies to the hot dish, so why not try Turkey Divan.

Line your casserole dish with fresh or frozen broccoli, then add the turkey on top. Make a cream sauce or a cheese sauce and bake the dish for 20 minutes and you are done.

The key is a delicious sauce, if you are not familiar with making sauces, whip together a can of cream of mushroom or chicken, a cup of milk, 1/2 cup of chicken stock and spices such as garlic and thyme, and pour over the casserole, then top it with cheese of your choice and then bake.

Mashed potatoes would be an excellent accompaniment and the sauce works well over the potatoes!

Or, if you want to do a shepherds' pie, layer broccoli, turkey, perhaps mushrooms, then the sauce, top with mashed potatoes and cheese if you like and bake it the same way. One "pot" meal!



Sounds like good ingredients for a quiche, or some other egg based dish. Maybe one of those spanish omelettes with potato in? I think that would be quite nice with turkey, peppers and spring onions, and would be a good dinner...
