Question: Do commercial ovens and mixers used by donut shop differ from the ones used to make bread?
Can the same mixers and ovens be used for both donuts and bread?

Uhhh WHY would they have such expenisive and bulky equiptment that only had One purpose.

Of COURSE they are used for Anything and Everything,



Donuts are not baked, they are fried in fat and a deep fryer is a deep fryer.
There are only a few brands and types of commercial ovens and the biggest difference is some are designed to add steam to the baking process at some point; thats what makes that great crackling crispy crust on an authentic French baguette.
At a bakery, the same mixers ARE used to mix the different doughs needed for anything from icing to bread dough to donut dough to pie crust.
The only difference between the different mixers is size.

in food service 20 plus years, at a bakery for 12 of those years.



I'm not sure I'm reading this right but yes the same mixers and ovens can be used for both. A deck oven is really nice for bread but you wouldn't use that for donuts.
