Question: How to make a simple pasta sauce?
i was thinking tin tomatoes mushrooms peppers and an onion would that be ok it would be runny woruld it tell me if you think if that is ok

HOME MADE PASTA SAUCE
In a pot put
*oregano,
*hot crushed pepper,
*lots of garlic,
*basil,
2 chopped onions,
3 bay leaves,
6 links hot Italian sausage sliced into rounds, brown the sausage,with all the seasonings, maybe 20 minutes or so!
* = all to taste


Add 4 large cans of crushed tomatoes, 4 large cans of tomato sauce, 1 large can of tomato paste,10 ozs sliced mushrooms
add 4 to 6 chicken breasts and 4 to 6 thick pork cutlets
Simmer the sauce for about 3 to 4 hours
put into containers and freeze.



My FAVORITE quick tomato sauce
1 28 oz can of Crushed tomatoes (NOT FROM CONCENTRATE)
1 small can tomato paste
1 small onion diced
2 cloves garlic crushed
1 tsp dried basil or 1 tbs fresh chopped basil
1 tsp salt
1 tsp sugar (more or less to taste)
2 tbs olive oil
1/4 cup red wine (optional)
Method
in a sauce pan, heat the oil and cook the onions on med until translucent (7-8 minutes) stirring occasionally
Add the garlic and cook 1 minute (stirring)
Add the crushed tomatoes
Add the paste and stir until incorporated.
Add the rest of the ingredients
bring to a boil - cover and simmer for 20-30 minutes stirring so that it doesn't stick - and make sure you use a heavy bottomed pot).

You can start the sauce, bring a pot of water to the boil, put your pasta in the water and cook it and by the time the pasta is ready, the sauce will be too.

Easy sauce: saute the onion, garlic and pepper in good olive oil. Add some italian seasoning, or basil, thyme, oregano, savory to taste; fresh herbs are best, but dried will do. Deglaze with red wine. Let the alcohol smell dissapate, then add the tomatoes. Bring to a boil, reduce to a simmer, and let cook uncovered until it's reduced somewhat. Thicken with finely grated good parmegianno regianno. Pepper to taste; the cheese and canned tomatoes will probably be salty enough.



brown half a minced onion and a clove of garlic in olive oil in a frying pan
pour into a sauce pot, add tomato sauce 4 medium sized cans.
add a few pinches of basil, a little parsley, a tsp od salt and one of pepper
add about 4 oz tomato paste
add a can of diced tomatos, mushrooms, etc as desired.
spice as desired.

you may cook meat and veggies separately or cook them raw in the sauce. the sauce will be ready quickly without meat, pretty much when it gets hot. with veggies cook it about 30 minutes. with meat about an hour. with small to medium meatballs at least 2-3 hours.



I would add some tomato puree to it too, and if it is still too "thin" or runny you can either reduce the liquid by simmering it with lid off the pan, or you can add some cornflour diluted in some water to thicken it. The first option is the better one for taste though.



You can also take a can of tomatoes and just blend it in the blender. Makes a very simple sauce but good. You can also add spices to it if you wanted.



you are missing the most important ingredient, garlic. Also, if you simmer for a long time it will thicken up. or add a can of tomato paste.

Crushed tomatoes or tomato sauce, all the veggies you mentioned (sauteed in olive oil and garlic) and italian seasoning.



Look up the recipe for pasta puttanesca, very simple yet one of my favourite dishes.



You'll want to add olive oil, garlic, tomato paste, and fresh basil at the end.
