Question: How can I make the chipoltle sauce used at Subway?

1 cup mayonnaise
1/2 ounce Dijon mustard
1/2 ounce freshly squeezed lime juice
1 ounce chipotle chile in adobo, pureed
1/4 ounce fresh garlic, minced
salt, to taste

My guess is that you would take a chipotle in adobo sauce (comes in cans) and puree it with some mayonnaise. In fact, you may even want to skip the chipotle and just use a tablespoon of the sauce from the can of chipotle chili's. If you expiriment with this, start with just a small amount and gradually add more to your liking.

Look at the ingredents in the recipes and try some



If you want a fresher chipotle taste, get the dried chipotles at the supermarket and simmer them in water on low heat to reconstitute them. Then use the recipe in the second post.
