If you use butter, you have to keep in mind that it's about 20% water, and that it doesn't have the same melting properties as vegetable oil (obviously). I'd recommend starting with 25% more butter than your recipe called for oil, and melting it either on the stove or in the microwave. If you use the microwave, you'll have to adjust the other liquids to compensate; if you use the stove, you can boil off the water before using the remaining butterfat.
you can use normal butter or vegetable shortening. you can get them from normal supermarket.
Butter or simply oven paper should be fine.
